Apricot Barbecued Chicken

Aside from omitting the garlic next time (especially 3 cloves worth; that was way too much for this kind of dish), I loved it and will make it again!! Super easy, and incredibly good.

Apple Matzo Kugel

Wonderful!!! All the recipes I used to have for this used a dozen eggs and a lot of sugar. This was a lot less, and it was great to make!! I doubled it and put it into a 9x13 pan. Came out wonderful!!!!

Easy Meatloaf

Super easy and incredibly good!!! My wife had ground turkey, so I used that instead of beef, and because it was Passover, I had taken a bunch of Matzah and put it into my Vitamix and grounded up in place of the bread crumbs. Other than that, made it as is, and it was great!!!! Will make that again.

Beer Batter

It was a semi-decent start but lacked a LOT of flavor. Couldn't really taste the beer; so I need more practice on this because it just didn't work as well as I thought as it would. Oh well.

Pear Honey Cranberry Sauce

I made this for Thanksgiving to do a) something different with Cranberries, and b) try to have a cranberry sauce that has no sugar. I know honey is sugar, but it's different, and it made my wife happier using honey. In any event, this came out great!! Great flavor, great mixture. I'll keep this and make it again next year.

All Day Apple Butter

This was so easy, yet so difficult. Difficult in making sure I start this at a time where I can deal with it the rest of the day. Easy because it was super easy. Started it at 9 in the morning, and was able to jar it by 7:30 at night. I did modify the recipe slightly. Instead of the various spices, I cheated and just used about a tablespoon of Pumpkin Pie spice (key word is about; i just started sprinkling it all over the top), and I cut the sugar in half and used brown instead. I used all kinds of Apples: Mostly Granny Smith, but some Pink Lady and some Fuji as well. This gave a very interesting and VERY tasty blend. I will TOTALLY do this again next fall. We have a place called Apple Hill near the Sacramento area where we get nice, good apples. I will look forward to possibly making this a tradition!!

Apple Dip

SUPER, SUPER easy and SOO SOOO good!! I used light cream cheese to make it less fattening (not totally healthier because you can't get healthy with that amount of brown sugar) and doubled it. I sliced up a ton of apples, brought them into work with the dip, and it was wonderful. Piece of Advice: Use the more tart apples to dip with. The sweeter ones just overpower everything. The tart and the dip compliment each other nicely.

Good for You Greek Salad

It was good, but it needed a hair more flavor. It was a little too bland. I'll probably add some red wine vinegar with it to give it more. Otherwise, simple, easy, and a good starting point.

Chicken Souvlaki Gyro Style

This was excellent!!! The chicken was easy to make and it went extremely well inside of a pita with the tzatziki sauce and veggies. The tzatziki was easy to make as well. I didn't know what greek seasoning was, nor could I find it, so I threw in basil, oregano, onion powder, and garlic powder. Paired this with the "Good For You Greek Salad", and this was a great dinner. All we needed was a rice dish to go with it, and this would had been a perfect dinner. But, this recipe is a keeper and I will DEFINITELY make it again. The author of this recipe, however, needs to edit the servings… This serves WAY more than 4 people, and the nutritional facts are SUPER high because of that. So, hopefully that will change because it makes it show how healthy this actually could be.

Lower Fat Banana Bread II

Absolutely amazing recipe. We made a few minor adjustments, which actually made it healthier. We substituted brown sugar for white sugar, and instead of a cup and 3/4 of flour, we used 1 cup of whole wheat flour and 3/4 cup of white flour. It came out spectacular. We added a touch more vanilla, too, and we upped the bananas to 3. It was a great recipe. Will make it again (in fact, we're making a second loaf tomorrow).

Pat's Baked Beans

This recipe is absolutely fabulous. I omitted the bacon and the garbanzo beans (since garbanzo beans just don't seem right in baked beans) and doubled the pinto beans to compensate. I've made this a few times. It's wonderful. Moved now to my cookbook.

Cream Cheese Frosting II

My wife made this for me tonight to put on a carrot cake that she got (that had no frosting on it). She halved the recipe, and said it was super easy. No changes, otherwise, but it did come out great!!!

Grandmother's Buttermilk Cornbread

Holy Cow. This recipe is super simple, and for how simple it is, it is SOOOOOO good!!! Just like one reviewer said, because I was using salted butter, I saw no need to add more salt. I had Whole Wheat Pastry Flour, so I used it. It didn't do anything to it in subtracting flavor or make it cook weird. So, it came out healthier (Well, as healthy as a cornbread with buttermilk and a stick of butter can be)… ;-) All in all, this recipe is TOTALLY a keeper!!!

The Best Ugly Turkey

Great way to make a turkey. Super Moist, super delicious. I swear the best way to make a turkey is to make it in a roaster. I bought an electric roaster, and it always makes it great; this made it even better. The name of this fits perfectly because the turkey comes out incredibly ugly; it fell apart during cooking, doesn't stay in tact, and don't even think about carving it like a normal turkey. But, on the flip side, it all just fell apart, fell off the bone, and when I just had the breast fall off, I was able to slice it and it worked perfectly. Will continue to make it this way in the future.

Orzo with Parmesan and Basil

This was good. I would make it again. I doubled the recipe, but still kept the butter at 2 tbsps, and I don't think it made a difference in how it was. I think I used a little too much broth, but once I drained the excess, it was fine. I also used a little too much pepper because was I tried to do it "to taste", it didn't work. I also omitted the fresh basil because I didn't have it. Since I was making it for a main course, I added frozen veggies to the mix when I added the broth. It made it pretty good and I might do that even when using this as a side dish. But, this is definitely a better side dish than a main course.

Ramen Cabbage Salad

It needed some tweaking, but it was a good base (I already submitted to have a custom recipe made on it). I made it double, so I used a whole head of cabbage and two packages of ramen noodles. I recommend using the Oriental flavor because that matches right. I then, instead of sunflower seeds, used sesame seeds (eyeballed it), used sliced almonds, and also added four chopped green onions. For the dressing, as someone suggested, cut the oil in half, so I left it at a 1/2 cup, used about 5 Tbsp of sugar, and then used 4 tbsp of rice vinegar and 2 tbsp of apple cider vinegar, along with the seasoning packets from the soup package. It came out great and everyone loved it. The thing I didn't do, which I need to do and will do, is add salt and pepper (especially pepper) to taste. I needs that extra flavor and kick. That was added to my customized recipe.

Cucumber Salad I

Quick, easy, good. I cut the water down to 1 cup and used kosher salt instead of seasoning salt. But, it was wonderful. Will make it again.
