I love to bake! Bread, cookies, cakes, etc. I also like to focus on making recipes diet friendly and good tasting!

Christmas cookies! I normally bake over 10 different kinds of cookies each season.
My cooking triumphs
pralines as good as the ones we get down south! Being hired to make over 20 lbs of christmas cookies for a company's gift. Having one of my original recipes published in a Taste of Home Cookbook. Becoming an AR Allstar!

Kofta Kebabs
I used beef in place of the lamb (although I am sure lamb is wonderful in this recipe!) I cut back on most of the spices just a bit and added some fresh mint. Very flavorful and just like the kind I get in a local Middle Eastern restaurant. I skewered some onion and pepper along with the meat and served over couscous and drizzled with tzatziki. Warm pita triangles on the side. YUMMY.

Al's Sufferin' Succotash
Used fresh lima beans and frozen corn, both microsteamed. Used less sugar and finished in a skillet with butter and a little cream, salt and pepper. I have never liked frozen lima beans, but fresh ones are a whole different story. They are delicious.

Cinnamon Vanilla Granola
Not bad. Not a very sweet granola at all. I used pure maple syrup, so bonus points for no refined sugar. I like that is lower in fat than some of the other recipes I have made. But it is also not very complex in flavor. Maybe the addition of some coconut next time and I do think it needs salt. As others have noted, this is not a "clumping" sort of granola recipe if that is what you are looking for.
