National Center for Home Food Preservation | How Do I? Can Salsa

What a wonderful resource. At the bottom of the page you find reference to an extension publication that tells you how to can "Salsas" as in not just this one recipe. I'll be on the phone tomorrow with my reference librarian asking for help to track that publication down! Wonderful info!

Easy Spicy Mexican-American Chicken

This was grub! We used the leftover chicken for tacos the next night. My guy suggested using our homemade habanero hot sauce. "No", the reviews said habanero was too much. Thank goodness for reviews. They help you to adapt w/ what you have. So, we used a coupla 1/2 bottles of hot sauce plus some some homemade thai pepper hot sauce. We skinned our chicken leg quarters, basted them shortly after removing foil cover, w/ sauce from bottom of dish (thickening nicely). Our 4 leg quarters were big so we doubled the sauce, but only used 2 tablespoons of cayenne for sauce, used 4 tablespoons of brown sugar. Next time, will use a bit more cayenne, and less brown sugar. We steamed some brown rice and there was enough left over to make lunchbox burritos and taco dinner the next day.

Black Pepper Beef and Cabbage Stir Fry

Nice dish. Added a can of bamboo shoots and a small pinch of chinese five spice, plus some summer sqaush from end of summer bounty. We had it over steamed brown rice. Quite a nice way to use cabbage ground beef and veggies.

Chicken, Stuffing and Green Bean Casserole

This recipe delivers on several levels. The guys are still saying chomp-chomp and telling me to rate it 5 stars. It is a great recipe because we usually have all of the ingredients on hand. It is also easy to substitute if needed. Several reviews have mentioned the salt factor. Did not add any but probably should pay attention in this recipe, because as always you can add but you can't subtract. We will be making this many times in the future. Used some french fried onions on top of the flavored stuffing.

Bread Machine Rolls

These came out great. I used milk 1/2 cup plus 1/2 cup water at 110 degrees (because no powdered milk in house). Added yeast plus a bit of the sugar to the liquid ( had to check because my yeast was a bit old). Then dumped yeast mixture into dry ingredients in bread machine. Used 2 cups AP and 1 cup whole wheat white flour. Added 3 teaspoons of gluten which essentially makes Ap into bread flour. Used dough cycle on machine and but checked as the dough was kneading in machine. Added 2 tablespoons of water because the dough felt dry. It varies sometimes because of humidity in air etc. Then followed recipe. Great results. Happy results. Only 3 roll/buns left and they will be headed out for lunch sandwiches today. We will make this again and again.

Don't Chicken Out

Not quite sure what to say about this recipe. It did come out tangy but still bland. We added some roasted Anaheim chiles and used 1/2 tsp. ground cumin and 1/2 tsp. whole cumin. Not sure how much balsamic vinegar my guy put in. The sauce was much more flavorful 8 hours later after the spices had a chance to meld and assert themseves. We are going to use the rest of the chicken and sauce for enchiladas tonight. The flavors were not there in such a short cook time. Might try again.

Walnut Brownies

Pretty darn good. Nice chocolate flavor (my guy commented on that after 2 bites). It's a great recipe because you probably have all of the ingredients in the cupboard. Now that I've said that, had to sub margarine for the shortening because no shortening in cupboard! I added 1/2 of a banana (mashed) as many people mentioned the recipe came out dry. We did not think it was dry. It did come out cakelike. Still, they were all gone by the next day and I did double it. This recipe is a keeper. Nice to be able to make brownies without special expensive ingredients. (Such as chocolate chips or fudge syrup.) This one stays in the recipe box and we will surely make it again.

Tasty Lentil Tacos

This was so good! I saved and printed the recipe for my Dad with ideas of trying it myself. Left the recipe laying in his recipe zone, (kitchen desk--big surprise) He instructed me to buy the ingredients because he wanted to try it. Totally chompy! We did a couple of things different. Used one reduced sodium can of chicken broth and added water for the rest of moisture requirement. Couldn't find salsa at the discount store so grabbed a 10 oz. can of Rotel tomatoes with green chiles. As per prior review, we cooked the lentils 40 minutes. (Also higher altitude requires longer cook time for legumes. Can't wait to make this for my meat eating guy. This recipe is so healthy and so yummy. Wait, forgot to compare the price of hamburger lately. Lentils really do give a good texture and flavor to this dish.

Spinach Brownies

These were delicious. I sauteed the onions plus a few chopped mushrooms and then added 10 ounces of chopped spinach to wilt down, all in 2 tablespoons of butter. Then went with recipe and added the rest of butter melted to the batter. Used part grated mozzarella and a bit of swiss. Stirred it all together and sprinkled a little parmesan on top before baking. Yum!!! We were having meatball sandwiches and these went so well with a bit of spaghetti sauce.

Cabbage Sloppy Joes

Third time to make this. It's really good. My Poppy made it and he gave it a grub thumbs up. We left the vinegar out because there was enough acid already. I agree with one reviewer who said it was too sweet. I would reduce the sugar by at least 1 Tablespoon, and we did add a dash of hot sauce.
