Chef John's Perfect Mashed Potatoes

I made this recipe almost exactly like it asked. I only have 2% milk, and had whip cream. I used 5 potatoes and 3/4 cup of milk. 1/2 of 2% milk and added the whip cream to 3/4 cup....followed it exactly!!!

Grandma's Egg Custard Pie

Reviewed: Nov. 22, 2010
I made this pie as directed. I did have to cook it a bit longer because it need to set. It tasted ok, but the egg came through more to me than a dessert. I would make it again but add cornstarch to make it a smoother texture and add additional vanilla and sugar.

Chicken and Bacon Shish Kabobs

Reviewed: Mar. 24, 2008
WOW! I just made this tonight, and it was sooo GOOD! I did add garlic and pinapple juice to the marniade. I did cook it on a reynolds wrap to keep the bacon juices from the flame, worked really well plus juices puddled making it work even better, can't wait to fix this again!!!

Chicken and Cheese Crescents

Reviewed: Jan. 24, 2008
I love this recipe! It's super easy and quick! I do make some changes, instead of cooking the crescents and sauce together, I cook the crescents chicken and cheese alone (bake until golden brown), then make the sauce to pour overtop or put on the side of the roll. That way you can have it as soggy or as flacky as you would like.
