Okay, admittedly, I am not a fan of chicken and dumplings, but the rest of my family is. I caved into their pressure and thought this was an easy one to make. I ended up really enjoying this! I did make a few changes ... First, I used chicken breast tenderloins cut into pieces. I used 3 cans cream of chicken soup, used reduced sodium chicken stock in place of water. I added diced potatoes and carrots, as well. The thing that sealed the deal for me was to use 1 can of buttermilk grands biscuits instead of 2 cans. I rolled the dough on a floured surface and cut into squares. The flour helped thicken the dish. I cooked for about 2 hours after adding the dumplings which allowed them to absorb the taste better! I think next time I might add a bit of half & half to make the stew a bit richer.
