SARALEE'S Beet Salad

I thought that there was to much sugar added in this after I tasted it. So I added an extra tablespoon of vinegar and then decided to let it set and see what happened with it. It was ok but still to sweet. Ended up adding Italian dressing to this. Which made it really good.

Blueberry and Raspberry Pancake Topping

Really good. I had a bag of frozen mixed berries so that is what I used it had blueberries, raspberries, strawberries and blackberries. Used this on top of pancakes and it was really good.

Mom's Signature Red Velvet Cake

I've only eaten Red Velvet Cake once in my life and it was well...bad. I thought I would try one anyway and see if I liked it or not. I really liked the cake part of this recipe. It was moist and had a nice flavor to it. The frosting was really sweet and kind of grainy, the grainy could be my fault I've never made a cooked frosting so I'm not sure if its supposed to be that way or not. I was also kind of confused about how much sugar was supposed to go into the frosting. The ingredient lists 2 cups but the directions say 1. So I used one then tasted but I thought it wasn't sweet enough so I added the other cup of sugar. It ended up being to sweet once I put it on the cake. But I don't know if it was supposed to be 1 or 2. I'll probably make the cake part again but use Ricks Special Buttercream Frosting for the frosting part. The frosting wasn't bad it was just not for me.

Julie's Sheperd's Pie

I'm kind of torn on this recipe. I loved the idea of Sheperds Pie in a crock pot but it didn't quite work out for me. I was concerned with the amount of juice that would come from the meat and the veggies and adding water to it. So I coated the beef chunks in flour to help thicken the liquids. I used about 3 T for a double recipe. It did thicken up the juices but not enough. For the potato/cauliflower mix I cut the milk out and used 2T butter and only about 2 T of cream, I didn't want them to be to moist with all the other juices going on in the dish. Also added salt and pepper to the potatoes. And I stirred in about 1/2 c of cheese into them as well. The juices from everything kind of seeped into the potatoes and sort of made them disappear. I even drained off about 1 cup of liquid during the cooking. I also sprinkled the cheese on top of the potatoes during the last 30 minutes of cooking. Its a really nice idea but just kind of fell flat. I did like the bacon added to it. Definitely needs some salt.

Triple Dipped Fried Chicken

Oh this is really good! I did up the spices just a little bit but I didn't really measure. I didn't have a regular beer on hand so I used a Guinness that I had left from St. Patrick's day. Worked really well, nice flavor. Thanks for the recipe.

Pumpkin Pasta

I enjoyed this dish, my kids weren't to thrilled with it though. I doubled the recipe and used a whole can of pumpkin and a pound of pasta. I thinned out the sauce with a little cream since I was using more pasta. Thanks for the recipe.

Chicken Tinga Tostados

Ooh Yummy! These are fantastic. I did throw the chicken with the onions and the pureed tomato mix into the crock pot and just let it cook for about 6 hours then shredded it up and cooked for an additional hour on low. I only used 2 medium onions. I used 2 28oz cans of whole tomatoes. The fresh ones were crazy expensive. I also made a chipotle sauce, about 4 chipotles about 1 T of adobo sauce, mayo, sour cream, a bit of cilantro and a dash of lime juice blended it all together. It went very well on these. Also took the time to fry corn tortillas fresh, so completely worth it. I'll definitely make this again.

Quenching Creamy Raspberry Punch

Family loved this. I halved the recipe. I did have to change the soda I couldn't find raspberry cream soda so I used plain cream soda. Since I was going to be missing the extra flavor I pureed 12oz of raspberries with softened ice cream and the juice concentrate before I added it to the soda. I think the pureeing with the ice cream helped it mix with the soda a lot better than just dumping the ice cream into the soda/juice mix.

Slow Cooker Lime Chicken with Rice

I thought this was ok. I did think it was missing something but it was a crazy night and I didn't have time to play with it. But I think some cilantro would be a great addition in here. My husband thought it had to much of a lime flavor to it. Also I used regular rice and put it in the crock pot an hour before it was finished. 45 minutes would have been better.

Hamburger Steak with Onions and Gravy

This was really good. Super easy to put together. I left out the cooking sherry since I never have that. Added a little bit of Worcestshire sauce into the gravy and dredged the patties in flour before I cooked them. Thanks for the recipe.

Creamy Strawberry Crepes

Yum! This was the first time I've made crepes and they turned out fantastic. I did use more than 2 T of batter. I probably used about 1/4 of a cup per crepe. Maybe less I didn't measure though. I also used Mascarpone cheese instead of cream cheese. Drizzled with a bit of chocolate syrup. They were so good!! Thanks for the recipe!

Yum! I did just use a bottle of ranch dressing since I had it on hand. Also added cucumbers, radishes, red onion and green bell peppers. Also added some broccoli slaw. Thanks for the recipe.

Chicken and Red Bell Pepper Salad Sandwiches

Yum! This is really good. I did season the water that I boiled the chicken in with garlic powder, onion powder, and celery salt. I completely forgot about the heavy cream when I was making it so I left that out. I served this on croissants with lettuce, cucumber and tomatoes. Very good. Thanks for the recipe I'll be making this again.

Peanut Butter Feather Pancakes

I liked the idea of peanut butter pancakes but these had a really bitter funky taste to them. I did cut the baking powder down to 2 tsp but maybe 1 1/2 would have been better. Even 1 tsp maybe. The kids liked these though. Served with chocolate syrup and whipped cream.

Italian Style Brunch Cakes

Recipe Group Recipe****Very good! My kids loved these and were asking me when we would have the pizza cakes again while they were still eating them :) I did change the recipe a little. I didn't have red bell pepper so I used all green, added garlic powder and extra Italian seasoning. I used the little mini pepperoni's and they worked great in this recipe perfect size for the cakes. The kids liked these dipped in pizza sauce I wasn't to fond of it that way but I did use some soft Swiss cheese spread on top and that was awesome. Thanks for the recipe I'll be making these again.
