Ham Cake-ettes

Fantastic recipe! I made these for hubby's birthday breakfast. He loved them. Great flavor and very easy to put together. Served these with fried eggs. Yummy! I put the ham in a food processor because I was being lazy and didn't want to do it by hand. Great way to use leftover ham and taters. Thanks for the recipe Avon :)

Maple Glazed Sweet Potatoes with Bacon and Caramelized Onions

These are fabulous. Great way to get away from my normal sweet potato dishes. I loved the salty smokey flavor of the bacon and the onions were a great addition. I will make these again! Thanks for the recipe.

St. Patrick's Chocolate & Mint Cheesecake Bars

My daughter who loves all things mint-y absolutely loved these. I did change the recipe a bit. Apparently after Christmas my small town doesn't carry the dark chocolate and mint chips! So I had to use Andes pieces or something like that. Also instead of the pre-made cream cheese frosting I made my own using Cream Cheese Frosting II from AR. Then just measured out 16 oz. It worked fabulously. Lots of steps in the recipe but it goes quickly. Mine didn't crack or fall at all, I did have my cream cheese at room temp so maybe that helped. They actually came out very nice. But when I was putting them in the fridge I dropped them right onto the floor!!! Lucky for me I had them covered so at least they could still be eaten they were just really ugly after that :( But tasty :)

Deluxe Corned Beef Hash

Great recipe! I was very happy to find a recipe for this using fresh corned beef instead of canned. I used the leftovers from St. Patrick's Day. Left out the carrot. Thanks!

Easiest Mac-N-Cheese Ever!

Super easy. I've been doing this for years when I need a quick mac n cheese. I usually add any bits and pieces of shredded cheese I have laying around in the fridge. I don't measure anything just kind of eyeball it. Yum.

Grilled Asparagus

Perfect. Found some asparagus on sale and so I thought I'd try it on the kids. Hubby hates it so I don't ever make it. Used this recipe and the kids loved it! I had to make sure I got a few spears for myself, they just devoured it :) Served with lemon wedges so you add a squirt of juice. Thanks!

Heather's Healthy Oatmeal Surprises

These were really good. And its a forgiving recipe. I decided to double this without checking my ingredients, bad idea. Went to add in my oats and I only had 4 1/2 cups of oats. Oops. So I added 1 1/2 cups of coconut :) Worked great. These cookies aren't overly sweet which is not a bad thing. Left out the nutmeg and cinnamon because I forgot them. :O This is what happens when you talk on the phone and try to bake at the same time. Great recipe and the family loves them. Thanks!

This was okay. Not sure what went wrong but it kind of lacked flavor. The marinade smelled wonderful when I made it and the meat marinated over night as called for. Just didn't quite penetrate the meat. Don't know. It was good just not what I expected. Thanks for the recipe.

Baked Blueberry French Toast

This was very good. I hate making breakfast in the morning so I love overnight recipes. I did make some changes to the recipe based on what I had on hand. I used Texas Toast instead of french bread and I cubed the bread. I never have egg substitute so I used 12 eggs, I did have to add 2 extra eggs I think I used to much bread. Also I used all plain yogurt no sour cream and added a little extra milk, again because I had to much bread. Good recipe not to sweet which is perfect because then you can add syrup! Thanks for the recipe.

Irish Heritage Cabbage

I love cabbage and this recipe was pretty good. I don't think I used the full 2 teaspoons of nutmeg, I just lightly grated nutmeg over the cabbage. Was a nice addition.

Mmm Yummy. Made t his for dinner tonight and the family enjoyed it. First time we've had this. I added green bell pepper along with the red and used a can of Rotel instead of chopping tomatoes. I was being lazy. Left out the water and simmered this on the stove for 2 1/2 hours. Meat was tender and flavorful. Served with tortillas and rice. Thanks for the recipe!

This was tasty. I used threads of saffron instead of powdered. Subbed veggie stock for the water. It came out delicious. I could have used a few extra strands of saffron but I was unsure how many to use, think I used 3. The cooking directions are really great. Thanks for the recipe.

Flan Mexicano (Mexican Flan)

This was my first attempt at Flan, it was also my first time eating flan. Whenever I have seen it at a restaurant I was never tempted to try it. But the other day my son was asking about flan and if it was good or not so I figured the best way to find out was to make it. I had to make this 2x. The first time I tried to make these in mini spring-form pans. Really bad idea they leaked all into the water bath and just made a big yucky mess. So I tried it again the next day. I used 6 6oz ramekins and baked for 40 minutes. This was fun to make. And surprisingly easy. I expected it to be more complicated. The texture was silky and smooth. Lovely flavor with just a hint of orange to it. Really fantastic and now I know that Flan is fabulous. Thanks for the recipe!
