Naunie's Pastera (Leftover Easter Pasta Bake)

We really enjoyed this dish. I did kind of mess up though :( So I had to make some quick changes. Accidentally bought large eggs instead of jumbo so I was short on eggs. Since I only had two other eggs at home I had to improvise because my pasta wasn't really floating. So I added heavy cream. Not perfect but it worked well, so I don't think it came out the way it was supposed to, still delicious. I also used more cheese but I didn't measure it. I just shredded what I had left of my Romano wedge :) I'd definitely make this again (using the right eggs and no cream).

Easter Cake

This was really tasty. My family enjoyed it. Have to admit I was a little scared of the drizzling hot syrup into the egg whites. I'd never done something like that before. No worries though I just made it harder in my head. :) It took a little bit of time to put together but the end result is worth it. I didn't use a seven minute frosting, only because I don't care for it, so I used a stabilized whipped cream frosting. Lovely cake. Thanks for the recipe.

milk is way off. I slowly added the milk after mixing everything together until I got a batter that was thick enough to hold together and fry. Almost like a muffin batter :) The flavor was pretty good but it could use some sugar and I think brown sugar would give it an extra boost of flavor. I'd say about a 1/4 cup since you do add powdered sugar after frying. Just really wasn't sweet enough.

Mediterranean-Style Eggplant Pasta

This was pretty tasty. Loved the cheese and the eggplant. It did need more salt. I also would have preferred thin spaghetti or angel hair pasta, but thats just a personal preference.

Quick and Easy White Cheese Dip

Heavenly Lemon Cake

This was delicious. Really easy to put together. I also loved that it was a smaller cake. Loved the lemon flavor it was the right amount. Little on the sweet side but its cake. Will make this again!

Smoked Sausage White Bean Chili

Wow! Absolutely delicious! I made exactly as the recipe stated and my family loved it. We didn't have any leftovers. Seriously simple, easy, and delicious. This one is going into the keep on hand ingredients so I can whip it up whenever I need a quick meal! Served with cornbread.

Pumpkin Cheese Tarts with Pecans and Cinnamon Sea Salt

These were pretty yummy. Definitely a different use of pumpkin than I am used to. I did add extra cayenne pepper to the pumpkin cheese mixture. Certainly are a pretty little appetizer.

Baked Apple Crisp

This was pretty good. The flavor of the apples was nice and the applesauce added a very nice boost of flavor. I wasn't a big fan of the topping. Wasn't really very crisp. Wasn't bad just wasn't what I think of when I think apple crisp. I would definitely use butter in place of the evaporated milk if I was going to make it again.

These were really tasty. I couldn't help myself and added about a 1/2c extra oats :) They did take a lot longer to cook than stated. They sure didn't last very long around here.

I made this for dinner tonight. But I subbed Johnsonville Mild Italian Sausage. It came out very delicious. Served with eggs and toast. The sausage was a nice substitution.

This soup was really tasty. The sausage was nice and the soup came together really quickly. Served with garlic toast. Great for a cold day. And the leftovers reheated very well.

Tomato Harvest Marinara Sauce

Great base recipe. I used 12 pounds of tomatoes. I blanched the tomatoes before pureeing them. The sauce was thin at first but as it cooked down it thickened up. And yes it did take a long time to thicken. Worth it though. I skipped the canning because I don't know how to :/ Sad for me. After the sauce thickened I added extra spices and made a really nice spaghetti and meatball dinner.

Mezzi Rigatoni with Chicken Thighs, Rosemary, Lemon Zest and Roasted Garlic Sauce

We thought this was pretty good. I really like the hint of lemon. I did use chicken breasts since that is what I had. I sauteed the chicken with garlic, and onion. Also added extra seasoning to the sauce. Quick and easy.
