Cornbread Casserole

Came out FANTASTIC!!! I added 1/3 cup of sugar, and I actually forgot to add the butter and it still came out great! I also used 8 ounces of sour cream. I'm definitely making this again. Hubby enjoyed the cornbread casserole better than the main dish!!!

Marinated Tuna Steak

This came out PHENOMENAL!!! I did not have access to a grill, so I just pan seared it (in a little butter) a few minutes (about 4) on each side and then put it in the oven at 350 degrees for about 6 minutes and it came out great! Very flavorful! Husband loved it! I'll definitely be making this again!!!

Chicken Pot Pie IX

I absolutely LOVED this recipe. The first time I made it, I followed it exactly and I would have given it about 4 stars because it was dry & not seasoned as well as I would have liked So this time around, I made these small modifications which made it PHENOMENAL! 1) Added additional seasoning (garlic powder, fresh ground pepper, etc) 2) Before I put my chicken/veggie mixture in the pie shell, I put a thin layer of sauce, then a layer of chicken/veggie mixture, then another layer of sauce, and I kept repeating that the entire way. The first time when I just put the sauce on top, the bottom was dry, but this time, the sauce was evenly distributed all the way through and it turned out great. 3) I cooked on 375 for about 40 minutes.

Country Green Beans

This recipe leaves my husband cleaning his plate every time!!! Since we try not to eat pork, I substituted smoked turkey necks and it was EXCELLENT! Make sure to get the "smoked" turkey necks if you can b/c it does make a difference in the taste. Sometimes, I'll cook the turkey necks in the pot w/the onions for a while first, and then remove the turkey necks and cut the meat off of the bone and then throw the meat and the bones back in the pot w/the green beans! YUMMY!!!

Restaurant-Style Hashbrown Casserole

This recipe came out great!!! Normally when I make a recipe, I tweek it out to my liking, but I took a chance and made this recipe EXACTLY as it was and it came out phenomenal! (That's probably b/c last time I tried to spiff it up and added Velveeta cheese and it did not come out right). This tasted just like the Hashbrown Casserole they serve at Cracker Barrel!!! One of the simplest recipes I've ever made! Most definitely a keeper!!!

Rich and Creamy Tomato Basil Soup

This soup came out great!!! Word of advice: Puree the tomatoes before putting them in the pot to simmer!!! DO NOT PUREE THE HOT TOMATO MIXTURE!!! I did this the first time I made this and even after I let it cool a little, the heat from the mixture in the closed blender caused the hot tomato mixture to explode! It got all over the walls and burned me! Other than that, this is a great recipe! The fresh basil is an absolute MUST!

Orzo with Parmesan and Basil

This was a quick and easy dish to make. I only give it three stars because although it was good, it was definitely not something to write home about. Would I make this dish in the future?... probably every once in a while, but it will definitely not go into my favorite recipe rotation!

Fast and Delicious Black Bean Soup

This turned out great!!! I doubled the cumin, and added about a teaspoon of a blackening season mix that I had. I made this in the morning for lunch, gave my husband a taste and he ended up eating it for breakfast! This is definitely a keeper!
