WOW is all I have to say about the chicken I made tonight.  I was inspired by the recipe of bacon roasted chicken thighs with potatoes (see my earlier post), but I took it to an even higher level...  Here is what I did. I made 1/2 of this recipe for paleo stuffing from… MORE

BBQ Spice Rub
I substituted coconut sugar for the brown sugar to make it paleo friendly and I left out the cayenne pepper because my husband and kids can't take spicy, but this is probably the best bbq rub we've used! I use it on ribs that I slow cook in the oven and they are always a huge hit with my family!

Horseradish Pork Chops
I was very surprised with the combination of horseradish and pork. My very picky 6 year old even ate this up! I used almond flour instead of bread crumbs since we are gluten free and cut up some red potatoes an threw them in the pan with the pork. Served it with sauteed kale and baked onins, too.

Baked Ham
I make a ham every Thanksgiving and this was by far the best one and it was so easy to prepare! I made this ham and a small turkey for Thanksgiving and there was very little ham left over. I put it in a roaster oven at about 325 until it came to temperature and used a full can of cola. It was tender and flavorful. I plan on making it again for Christmas dinner and will also probably make it for New Years! Thank you for this recipe!
