Chef John's Prison-Style Meatloaf

First time through I made this recipe with equal parts beef and turkey. All other ingredients were the same except for the sauce. I mixed together raspberry chipotle sauce and Sweet Baby Ray's raspberry chipotle barbeque sauce and spread it over the meatloaf. My, my it was yummy! My second experiment is in the oven as I type...will let you know how that turns out.

Russian Salmon and Potato Salad

Love this potato salad version. Canned salmon adds so much to the flavors. Followed the advice in the other reviews and used 5 hardboiled eggs and chopped them.

Zucchini Souffle

A great way to use up that extra garden zucchini. Made this with whole wheat flour, melted butter and additional seasoning, specifically chopped garlic. I also topped it with shredded mozzarella cheese during the last minutes of baking. Loved the taste! The texture right out of the oven was a bit 'wet'. Not sure if it should have been baked a bit longer. I will definitely make this again, hopefully this week as I have lots of garden zucchini. I think I add other vegetables...mushrooms, tomatoes, peppers, just to make it interesting!

Homemade Horseradish

It's worth 5 stars even though I left out the sugar and waited 3 minutes before adding the vinegar! It is better than any prepared horseradish I've tried!

Green Tomato Pie IV

I made alterations to this recipe based on the reviews on all of the Green Tomato Pie Recipes. My pie was delicious and a big hit with my family. Even the ones that were only going to 'taste' it and were sure they weren't going to like it. I proved them wrong. To prevent some of the 'runny filling' issues, I added 2 tablespoons of corn starch to the filling mixture. Then I melted some butter in a pan, added the filling and cooked it until it was thick. I let it cool before putting in the pie crust. For my version, I sliced the tomatoes quite thin, maybe an 1/8 inch. I also doubled the amount of cinnamon and nutmeg. For my next pie, I would use more than 4 cups of sliced tomatoes...just to have more filling in the pie. The more tomatoes added, also add more sugar.

This recipe was a great hit at our party. I multiplied the recipe by 5, cut the sugar by 2/3rds and added 3 tablespoons of prepared spicy barbecue sauce...very tasty!!!
