Marinated Grilled Shrimp

Made this useing frozen shrimp. Made only one change as posted by another reviewer. I used Balsamic rather than red wine vinegar. Marinated in the frig. over night, and cooked under the broiler as I don't have a grill. Came out great, everyone raved about the flavor and couln't seem to get enough. Served with Provincial Tomatoes (from this site), my Cinnamon Carrots, and pasta salad. Try them, you won't be disapointed.

Home-Style Brown Rice Pilaf

Made this for dinner last night as an accompanyment to my main dish of Calves' Liver with Sherry ( another great recipe from this site). I was trying to get a brown rice dish for this main coarse and the 'pilaf' caught my eye. Normally I don't use rice as my wife is not a rice fan, but I had made another pilaf a while back ( From Tase of Home )that she really liked, so tried this one (with some changes as others had suggested). I used a 14 oz. can of beef broth and a 10.5 oz. can of Cambells French Onion Soup instead of the water, and extra virgin olive oil instead of butter. I left out the carrots, salt, mushrooms ( wife doesn't like them) and the chickpeas. I added 2 roasted red peppers ( for color )cut up into 3/4" pieces for the mushrooms and used a small can of corn in place of the chickpeas. also did not use soy sauce. Other than that I followed the cooking time exactly, and the rice came out perfect. Wife said it was really good, so you get 5 stars. And it went very well with the Liver dish. It is another keeper.

Garlic Balsamic Shrimp

Made this yesterday for dinner with a few changes. First I used extra virgin olive oil, but only half as much as called for. For the other half I used Sesame oil. Then I added a half teaspoon of ground Ginger. I also used a Red Onion.Then I marinated all the ingredients for 4 hours in the refrigerator. Didn't have any skewers or grill, so placed the veggies in a 13 x 9 x 2" baking dish with the marinade. Covered with foil and baked on the center level at 350 deg. for 25 minutes. Removed from oven and layered the shrimp on top of the veggies, recovered and baked for an additional 10 minutes. served with mini corn bread loaves and a green salad. Came out great. The wife loved it and so did I. will definately be making this again. It's a keeper for sure.

One-Pot Pork Chops

Did this last night for dinner. Was O.K. but not quite up to expectation. The method for cooking (following the recipe to the letter)caused the chops to burn on the bottom, and the veggies to stick to the pan. I think I will probably try this again but will change the method of cooking. Also it was rather bland, so will try picking it up with herbs and spices.

Slow Cooker Taco Soup

Made this yesterday ( with some changes ) and was very well pleased with the results. First I down sized to 4 servings, then doubled the following items. Ground Beef, Chili beans, Green chili peppers. Left out the Kidney beans as we do not care for them. Added one teaspoon of ground Cumin and about a half teaspoon of chili powder.. Mixed everything well in my slow cooker and cooked on high for three hours. Came out perfect.

Calves' Liver with Sherry

I am not a great fan of liver, but my wife loves it, so for her I decided to give it a try. I followed the recipe exactly, except that I did not have French bread so used some Sour Dough that I had on hand, and it worked just fine. I also did as Dr. Shaw , and turned the left-overs into a Pate for the wife, as she loves that also. This is definately a keeper and will probably make it for the next family gathering just to turn it into the Pate just for the pre dinner appitizers.

Bermuda Spinach Salad

Absolutely OUTSTANDING. I too made some changes, but loved it and my wife drooled over it. I used Balsamic Vinegar and didn't have Celery seed so used sesame instead. Will most defiately be making again. Would rate this as a 10 if it were available.

Baked Dijon Salmon

Outstanding, I kind of cheated a little, as I did not use Salmon, but instead used wild caught Pacific Red Snapper. Then I marinated the fish in Kikoman's Honey Mustard marinade for two hours. From then on the basic recipe was followed. Coupled with Asparagus spears ( here I cheated even more as I used canned, and heated in the microwave), and as suggested, a glass of GOOD Chardoney. Definately a keeper and goes on the "A" list

Slow-Cooker Pepper Steak

Used Tri Tip instead of sirloin, one red and one green bell peppers ( for color )and cut into strips rather than chopped. Was a little too salty, so next time will cut salt in half. Also was a little too much sauce, so will try a little less water. It is definitly a keeper. Thanks Marge.

Heavenly Pink Salad

We added about 3/4 cup each of Grey Goose green and Yellow Mariscino cherries cut in half, and also drained the pineapple. Every one raved about it and requested the recipe. A definite keeper.

Roast Potatoes

This recipe challenged my "creative" nature, so I added 1/4 teaspoon of fennel seed and 1/2 teaspoon of thyme along with the rosemary, and chopped them all together. also I used extra virgin olive oil. The time had to be extended to 35 minutes, so the next time I think I will try boiling the potatoes first. This is definitely a keeper.
