WOW! Despite the reviews, I really did not believe something so simple could be so good -- it is fantastic! As per some other reviewers, I added cinnamon to the topping.

Pear Coffee Cake

Very moist and yummy! As suggested by others, I cut the coconut in half and changed half the sugar to brown. I also replaced all the oil with unsweetened applesauce. When I make it next time I will add more cinnamon and a dash more salt....and maybe a bit of lemon zest.

Honey and Feta Spread

Fantastic! Followed tips here and used a bit of neufchatel cheese to smooth out the feta. Served with lightly salted pita chips, and ever single bit was eaten!

Dried Cherries, Pecans and Rosemary Brie en Croute

FANTASTIC! I used tawny port to soften the cherries -- microwaved them lightly to hasten the process -- and it was sublime! Lessons Learned: DO drain the cherries well, and do NOT remove any of the brie's rind. I removed the top and bottom thinking it would help flavors meld and speed the heating process (I was in a bit of a time crunch). But without the rind to contain things......a bit messy.

The Perfect Mai Tai

Also makes a nice drink omitting the OJ and using just Simply Limeade. 151 is entirely for kick, and does not seem necessary for taste.

Fortune Cookies III

Requires experience to handle, but that's true of all fortune cookie recipes. Used half almond & half orange extracts. Trim for smooth edges with kitchen shears before cool.

Southern Pea & Pecan Slaw

Seems too easy to be good, but it was fantastic! Because I had a Sweet Curry powder, almost doubled the amount, and it was a good thing. I also used more cabbage than required, so the dressing was a very light coating. The result was much more light and crispy than I normally associate with slaw.
