About this Cook
I love to cook, eat, and share it with family and good friends. I am originally from El Paso Texas, which is right on the US Mexico border, and where most food is homemade authentic Mexican cuisine with a good serving of Tex Mex & New Mexican concoctions all of us have picked up from here and there. All Latin food inspires me especially spicy food. While the burst of flavor of Mexican food is at the core of my inspiration, I am also inspired to find ways to not only continue cooking very traditional dishes but also how to make them healthier versions without any sacrifice on t Latin he taste. I also enjoy venturing into all sort of new and healthy ethnic foods including classic American dishes. I always enjoying tweaking them to make them my own and better for me and the ones I love. I am married with a wonderful husband who also enjoys cooking and eating healthy.
My favorite things to cook
My favorite thing to cook would have to be a simple egg dish that I learned as a child. Migas or as I first new it "Fritanga". It is a simple mixture of chopped onions, scrambled eggs, mixed with fresh corn tortillas cut into bite size pieces and fried before adding the egg mixture. The process, the smell and the food just take me back to my childhood breakfast at home with my mom.
My favorite family cooking traditions
My favorite family cooking tradition is of course breakfast and shopping for food together. I love getting breakfast ready and going or when my husband prepares breakfast for me. Very romantic. I love it because for a while there, when I was single, I was so busy that I would routinely skip breakfast and just catch something on the way. It really altered my health. Now I have regained and reclaimed an important part of my food traditions that keeps me healthy too. Hurray for Breakfast!
My cooking triumphs
Cooking a roast beef for a party. We don't eat a lot of meat and I know very little about picking cuts and cooking them. I had to cook a practice roast before the party. Although we had roast to last a month the recipe I used from allrecipe.com really came through. It was easy and a success.
My cooking tragedies
Overcooking a sirloin steak dinner for guest. I again I struggle with cooking beef. I did not practice this time. My friends love steak and I think positively the one I served them must have been the worst one ever, because they have never made it back for dinner again. : (
