Baked Flan

Great recipe! Followed it exactly with outstanding results. It filled the blender, but as long as I was careful to push the top down tight while blending, the mess other reviewers talked about didn't happen. I had a little bit of a tough time with the sugar and since I was using a 10x10 square corelle baking dish, it didn't get all the way to the edges before hardening. I put the dish on the stove to resoften it, and that helped, but there was still almost an inch around the bottom of the dish that wasn't covered with sugar. I also, because the dish was wide, melted 1 1/4 cups of sugar. The flan was only about 1 1/4 inches thick, but the sugar liquified nicely, the flan set easily, and the custard was super creamy. Made it for a dinner party. Everyone raved! Thanks for a great recipe.

Sopapilla Cheesecake Pie

Awesome, but I tried to rush the cooling process by removing it from the pan without loosening both sides...thank goodness you cut it into squares to serve! I cut it into 2"x2" squares. It is so rich, I couldn't imagine eating a whole suggested serving, which would be 3"x4". Also, like other reviewers, I baked mine for closer to 40 minutes than 30. Have some coffee, tea, or milk on hand for sure as well. Definitely a keeper, but don't rush the cooling.

Banana Oatmeal Bread

Great bread. Used butter in place of shortening (1 cube plus 2 T), added 1/2 cup chopped pecans and golden raisins. Used 3 bananas. Baked about 25 minutes in 9x9 square cake pan. Didn't find the loaf pan and it's so moist that I thought it might have been difficult to slice as a loaf. Loved it!

Good Old Fashioned Pancakes

Made as written. These are wonderful pancakes. All three of us agreed I should never make pancakes with baking mix again. They taste buttery and are very fluffy.
