Sweet and Spicy Salmon with Grapefruit Salsa

I tried this recipe today & was totally prepared not to like it at all. . I didn't really care for the salsa until I added a few Tbsp. of sugar to it. There was a little too much heat to the salsa & the rub. My preference, I guess. I like the fish to be the main thing I taste, not heat. Too much cilantro also. Just my taste preference again. I served this to my Aunt also & she agreed with me. Don't get me wrong, we both liked it really well, but would tweak it slightly next time.

Sloppy Joes II

I have made these for years using deer burger & sometimes Italian sausage, except I add about 3 splashes of Worcestrershire, & use about 1/2 cup of brown sugar instead of 3 tsp. I also don't add pepper, or garlic salt. Love them! So, I had to choose a recipe from Allrecipes with ground beef as an ingredient and “make it over” using Johnsonville’s Italian Sausage, This is the one I chose. Like I said before, I loved them. I also chose to use French bread with Italian Seasonings that I butter toasted on both sides on a flat grill.

Beautiful Baked Ziti

I thought this was a very tasty dish. The only thing different I did was to put the basil leaves under the tomatoes before cooking & sprinkled dried basil on top when finished for garnish, so to speak.

Easy Sausage Pizza by Johnsonville®

I really liked this pizza, but made a few changes due to availability & preference. I made my own crust because our store doesn't have anything like that. I also added mushrooms, red onions, & pepperoni because we like it that way.Even if I hadn't of changed anything, it would have been wonderful.

Cheesy Game Time Sausage Dip

Well, mine looks nothing like the other photo on here & I did it like it said. Very pretty picture though. I really liked this dip. I would leave the anise seed out next time & I like anise seed. I also melted the salsa with the cheese so the cheese didn't clump.

1-2-3 Jambalaya

I made this for lunch today & evidently didn't notice it called for the Zatarain's® Jambalaya Rice Mix when I made out my grocery list, so I had to improvise & make my own. I used 2 cups Minute rice & 2 cups of water & about 1 tsp. Cajun Seasoning instead. It was perfect. I used 13 med size shrimp instead of 1/2 cup. I also used the diced tomatoes with green chili's, so didn't need to add extra Creole Seasoning. It also never said to add the 2 mixtures together at the end, but I did. I would make this over again. Thanks Johnsonville®.

Kate's Black-Eyed Pea Salad

I used to make one almost identical to this in the restaurant I cooked at last. Love it. I used fresh cooked & cut up bacon instead of bottled. I also made it more flavorful by adding the bacon grease I cooked the bacon in. If you do this, decrease the olive oil by half.

Cheesy Chili Enchiladas

I made this exactly as stated. Here are my problems with it. Not enough flavor. Need more seasoning of some sort. Wrong kind of cheese for me, I like cheese in Enchiladas that is melted & very runny. The cheddar doesn't melt good enough. The processed cheese: I took it to mean Velveeta. Here is what I would do if I made this again. I would put the Velveeta on the inside of them & put the cheddar on the outside of them. I did sprinkle a little on after I got out of oven, because the Velveeta had kinda dried in place & didn't look good. I would also add some cayenne & jalapenos for more flavor. I would cook it longer also (covered with a lid to hold the moisture). But, it was just OK for me.

Family Secret Meatballs and Sauce

I liked this fine. I can't say it goes well with spaghetti though. I would say with mashed potatoes & fried carrots it would go well with. I only had to cook it about 1 hour. Any more & it would have dried out for me. I did just as stated above but only did half a recipe for hubby & me & had left overs.

Grands!® Monkey Bread

This was good tasting but putting all that bread in a tube pan, for me, made me have to cook it longer to get the middle done, therefor causing the sugar to crystallize. Next time, I think I will put it in a shallow pan & bake it.

I didn't have one of those grills you cook this on, so I used a flat cast iron grill & a cast iron skillet. It was OK but I don't like all the bread in it. Sorry! Good flavor though.

This was a very quick recipe to prepare. My only problem was that the center of the crust wasn't quite done. I think next time, I will pre-cook the crust for a minute or so before adding the ingredients. Other wise, I really liked it.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

I made this today for lunch. I couldn't find the right sausage, so I used Roasted Pepper & Asiago with Mesquite Smoke sausage. I couldn't find diced tomatoes with Italian herbs, so I had to use Rotel which has green chilies in it. The sauce was too thin for my liking, so I added 1/4 cup cold water mixed with 1 Tb. cornstarch right at the last & just heated until sauce thickened. I also used cooking sherry instead of wine. This was amazing! My husband doesn't like new dishes & he is usually meat & potatoes. I had a chicken breast & a whole other meal ready to cook him. He tasted this & said, "I think that's a meal in itself." I said it was supposed to be but I thought you wouldn't eat it. Did I mention he doesn't like anything with heat in it, like Rotel or he doesn't like noodles? He loved this & told me to put the chicken up, he was eating this. This will be a favorite of ours now. Thanks Al Fresco!

Easy Weeknight Chicken Pot Pie

I added more chicken seasoning & California style garlic salt with parsley. It came out really good but too runny. next time, I will double the amount of flour. I also used 24 oz. of veggies for the deep dish. I brushed the top crust with egg wash for a darker, crispier crust. Used deep dish, dark purple pie plate so the crust came out perfectly browned all the way around. Used middle shelf in oven. Took me 40 minutes.
