About this Cook
I'm a stay-at-home mom with one toddler son. I am trying to lose weight to join the military with my husband so I am trying to learn to love cooking. Fast food can be very addicting and it doesn't help it is so convenient! So I have been testing recipes on this site so that I can learn to cook and enjoy a much healthier lifestyle, not just for me, but for my family as well!
My favorite things to cook
I love cooking tilapia. My husband loves to cook, but he stays away from cooking fish, leaving me the only one in the house who can make an excellent seafood dish!
My favorite family cooking traditions
Every Thanksgiving, I love to make delicious sausage and cheese muffins. They are so tasty, that friends have learned to come to the house early if they want to get them before they are gone!
My cooking tragedies
I once tried to make deviled eggs using a recipe I got from my mother. She gave me the wrong measurement for salt and I was in such a hurry to get to a friend's house I didn't bother tasting them before I left. They were so salty that everyone couldn't help but pucker their lips! Needless to say, the whole batch was thrown out, but at least I learned from my mistakes!

Mom's Zucchini Bread
Very good! My husband was iffy about eating something that had vegetables in it, but after eating a slice, I now have a hard time getting any for myself because he eats it all. This bread is very moist. I did substitute wheat flour for the white. I also used applesauce instead of oil. One of these days I will try the breadcrumb topping I saw on someone else's comment. I'm sure it would make an already delicious bread into something fantastic!

Guacamole
This guacamole was excellent and will certainly be a staple in my household as most of our dinners tend to be Mexican themed. I didn't add the salt since chips tend to be very salty already.

Fire Roasted Tomato and Feta Pasta with Shrimp
This was amazing! Of all the recipes I have tried on here so far, this is the one the family keeps asking for. I did use dried basil because I couldn't find any fresh basil in the store. When I told my husband it was fire roasted tomatoes, he thought it was going to be spicy but it's not at all. I love the way the flavors of the tomato and the feta intermingle. This is an all around great recipe. I highly recommend it! If you or someone you know doesn't care for shrimp, you might try substituting for chicken pieces. I did this for a friend and it still came out great.
