About this Cook
I have benn cooking over 30 years but I stopped eating meat about 3 months ago. I also do not eat dairy except eggs that are poached or hardboiled. My husband is a redmeat redneck so I still cook meat for him and our two boys sometimes. They love most of the veggie dishes I make.I am getting better all the time.
My favorite things to cook
Veggies of course! I love to try new recipes. I love to try new sauces for different cold salads.
My favorite family cooking traditions
We have to have Apple & Pea salad on holidays. Always Turkey for Thanksgiving and Ham for Easter. We use my moms ham recipe. Christmas is a roast with all the fixings and a ham. Our oldest daughter always makes fudge. Our son has mastered the family Tri-tip secret!
My cooking triumphs
I am an avid juicer. Anything that the boys will drink is a triumph! My hubby rates my dishes in this order: Keeper, Doable, Tolerable and Thumbs down.
My cooking tragedies
I made a Saffron & rice dish and my Hubby gave it a thumbs down. He does not like the saffron. The boys did not like it either but I liked it. :)

Zucchini with Chickpea and Mushroom Stuffing
I used 1/4 teaspoon of coriander and about 8 ounces chickpeas. I melted italian cheese over a couple for my non vegetarian family memebers. Everyone loved it! Thanks for a great recipe.

Vegan Agave Cornbread Muffins
The family said it is a keeper! The only thing I changed was to use almond milk instead of soy milk. I will be making a lot of these!

Quinoa and Black Bean Chili
This was a hit with the whole family-even the 7 & 8 year olds. . I am the only vegetarian so when meat eating family likes a know it was good. They called it a keeper! I used fresh soaked black beans. Olive oil instead of veg oil. I added an extra zucchini because we like them. I did not use the jalapeno but I use a roasted green chili. I added more tomatoe sauce and two fresh minced tomatos. I also added fresh roasted corn about two ears. served it to the meat eaters with chedder cheese sprinled on top. Yumm!
