Fish Chowder I

This was fish-a-licious! I used frozen swordfish & shrimp. I also used celery, no onion. I added corn & used 2% milk. It was super good! Hubby loved it

Salmon Cakes II

These were excellent! I didn't chill them as long as directed, but they held together well. Next time I am going to try baking them instead. I also served them with the sauce recommended by another reviewer: 2 TBSP mayo & 1TBSP Dijon mustard. Very yummy,

Burnt Butter Frosting

oh my. This is divine. I used it on banana cream cupcakes in place of another frosting I didn't have the ingredients for. The only draw back is that is does set up fast, but really who cares when it tastes this good?

Corn, Sausage and Pepper Chowder

This is excellent! My hubby & I could eat this once a week. I make a big batch for lunches & leftovers. I have also added a can of diced green chiles to kick it up a notch and is very good. I use a can of creamed corn and a can of regular corn and don't put anything in the blender.

Peanut Butter and Banana Dog Biscuits

This was easy & fun; the dog loves them! I only had white flour, so used it. It seemed to work, although my dough was very sticky. Will get some whole wheat flour for next time, will make them healthier. I didn't roll them out, just balled them and flattened with the bottom of a glass. I will do these again.

Banana Sour Cream Bread

Maybe the best banana bread recipe I have ever tried. I halved the recipe, and used regular loaf pans. I had to bake them almost 80 minutes, but they turned out great. I also added chocolate chips, yummy! This will be my go to banana bread recipe from now on!

Actually Delicious Turkey Burgers

I have never been a fan of turkey burgers, always finding them dry and flavorless. This recipe surprised me. I sauteed the onion and green pepper first, then added to the mix. I also used some seasoning salt, and Worchestershire sauce. Ate them on a kaiser roll with melted cheese, tomato, and lettuce. Very good! I would make again. Hubby even liked them.

Baked French Toast

This was good, I would give 4 1/2 stars. First, it was pretty easy. It didn't really "feel" like french toast, more like a bread pudding, but nonetheless we enjoyed it tremendously. The middle part was a little soggy, even with 45 minutes of baking, but certainly not so soggy that we didn't eat it. The top part with the sauce was super crispy and caramelly. Super yum! No syrup needed, which was good because I was out. :) Will make this again

Best Big, Fat, Chewy Chocolate Chip Cookie

This recipe was great. I followed it to a T, except I made 36 small cookies instead of 18 large ones. Which was pointless, because I ended up eating twice as many, ha ha!

Oatmeal Peanut Butter Cookies

This is spectacular! Peanut butter cookies are my favorite, and this is easy and delicious. I did learn one thing as I was baking....for the prettiest cookies, roll into balls rather than drop them. And don't smash them with a fork like with other peanut butter cookies. I didn't have margarine, so I used butter. I also used crunchy peanut butter. After I mixed all the ingredients together, I chilled the dough in the fridge for about an hour while I did a couple other chores. I think that is why they raised just a little and are just beautiful to look at! This will be my new go-to recipe for peanut butter cookies!

Fresh Beet Salad

This was good. I am always looking for new ways to jazz up our favorite veggies. I used spinach instead of chard because that is what I had. I also drizzled with balsalmic vinegar, salt and pepper just before serving. Will make again!

Asian Roll Lettuce Wrap

Easy, tasty, & healthy! I didn't make the meat balls, just spooned the cooked meat mixture into the lettuce. I also forgot the red bell pepper. I was leery of the ground turkey, had never used it before. I have to say I was impressed...I added a little red pepper to it and it was quite good. Will make these again, and maybe even wrap them in egg rolls or wontons instead of lettuce for lunches.

This was good. I marinated for about an hour. Hubby thought it was fantastic. I had enough chicken left over to make big salads the next night, and it was super yummy that way too. Will put this in my rotation!

Oma's Rhubarb Cake

My husband & I scarfed this whole cake in a day. Unbelievably delicious and moist! I didn't change a thing, except I used 4 cups of rhubarb. I have at least that much left, so guess what I am making again today? :)

Tacos in Pasta Shells

I have been making this once a week since I found the recipe. My hubby thinks he has died and gone to heaven. Sometimes I add or subtract different things depending on what I have on hand. If you haven't tried the pre-flavored Southwestern Cream Cheese from Philadelphia, it is really good. I almost always use enchilada sauce instead of taco sauce. Last time, in place of the ground beef, I used leftover cooked chicken, shredded; then used green enchilada sauce. TO DIE FOR! You can't go wrong with this recipe!

Roasted Rosemary Cauliflower

I love this! My husband wasn't a huge cauliflower fan, but after the first time I made this, he said "I will eat cauliflower if you cook it this way!" I have made it once a week since, & we eat it up in no time. I season with pepper also. Super yummy!

Asian Salad

I made this for a potluck at work...everyone loved it. I used pre shredded coleslaw, left out the seeds & nuts (a coworker is allergic), & toasted the noodles without butter. I also added a chopped yellow bell pepper, baby broccoli, & a can of mandarin oranges. I also didn't cook the dressing....just mixed it all together & poured. I had just enough left for my hubby to eat for dinner...he liked it very much, & told me to make more next time!

Absolutely Fabulous Greek/House Dressing

yeah, made this for my hubby that was craving greek salad. Had a bunch of tomatoes, cucumbers chopped up, added feta cheese & kalamata olives.....we ate till our bellies ached! Simply wonderful! This will become a staple at my house.
