Bacon Wrapped Dates Stuffed with Blue Cheese
I can always count on bringing my plate home empty when I take these to any event. I use blue cheese crumbles, add an almond, and to cut down on the fat and mess of the bacon grease and to shorten the cooking time, I partially cook the bacon in the microwave, then top or stuff the date with a small piece of bacon. This preserves the saltiness and chewiness of the bacon, decreases the cooking time, and the dates are warmed instead of cooked to a somewhat hard consistency.

Fruited Ice Cream
I love that this ice cream doesn't need to be cooked! I've made it now with strawberry and peach and it's equally delicious and creamy either way. I like my ice cream more fruit and less cream, so I increased the fruit and decreased the milk, used fat free sweetened condensed milk and it was perfect for our tastes. Also, when the leftovers (if there are any!) are frozen, the ice cream doesn't thaw from rock hard to soupy like many recipes do, but remains creamy. I think I've found my new favorite ice cream recipe.

My Favorite Soup
I had leftover corn on the cob and decided to search for a corn chowder recipe using the ingredients "corn and shrimp" and came across this one on allrecipes. I made it for my husband and father-in-law for lunch to rave reviews. I lost count of how many times I heard "this is REALLY good!" Since I did not have condensed potoato soup, I just used 4 diced and boiled potatoes in water in it's place. I also replaced the cream cheese with neuchatel cheese, added a can of undrained clams, more corn and more milk since I like it a bit thinner. I topped the soup with crumbled bacon and green onion and had crushed red pepper on the table for those who like it hotter. Definitely going in my top rated keeper file!
