Southern Pimento Cheese

Made this a little lighter by using Neufchatel cheese and 1/4 cup Greek yogurt with 1/4 mayo. It makes an awesome gooey grilled cheese sandwich.

Black-Eyed Pea Soup

So good and so easy to put together. I made this using all pork sausage and precooked dried peas in place of the canned. We loved it! I can see myself making this again very soon.

Easy Garlic Green Beans

A delicious way to prepare frozen green beans. Some freshly ground black pepper was added before serving. I wouldn't hesitate to make this recipe again.

Peach Cobbler for Two

This makes a wonderful dessert for 2. It was made gluten free by using an all-purpose gluten free flour blend. A touch of nutmeg was added to the peach mixture and the butter in the topping was reduced to 3 tablespoons. The cobblers were cooked in 2 individual ramekins and at serving time were topped with a small scoop of vanilla ice cream

Tangy Cucumber and Avocado Salad

Really enjoyed this quick to make side. The recipe was reduced to 2 servings and a light sprinkle of cumin added. The flavors nicely complimented an Indian dish that this was served with.

Basil Sugar Snap Peas

A nice quick fix for sugar snap peas. The peas were rinsed and drained before adding to the microwavable dish thus eliminating the need for additional water. I did not have jarred pimento so I oven roasted 1/2 a red bell pepper and diced it to add to the finished dish. Went nicely with broiled fish and quinoa.

Quinoa with Mushrooms

This was reduced to 2 servings. I did leave off the cheese as I used this as a base to serve broiled fish fillets. The mushrooms add a nice flavor to the finished product. The cooking time was perfect.

Pomegranate Feta Salad with Lemon Dijon Vinaigrette

This is a pretty good salad. I did add diced avocado to the mix and think that some red onion would be a great addition. The dressing while tasty was a little thin. I might either decrease the amount of lemon juice or increase the olive oil next time. This was served topped with a chilled salmon fillet for a quick weeknight meal.

Lentils And Spinach

This makes for a wonderful vegetarian meal high in fiber. I used yellow onions and added in 1/4 to 1/2 teaspoon Harissa paste for some zip. The spinach was defrosted and excess water removed then added to the lentils the last 10 minutes of cooking. This was served over steam brown rice with cornbread on the side.

Quinoa Pilaf

This is a delicious side that went very well with chicken and caramelized pearl onions. I might try cooking it in vegetable stock next time for added flavor.
