Apple Butter Pie

This pie was delicious. I used 3/4 cup apple butter as others suggested. The pie was a little runny, so next time I will add another tablespoon of flour. I also used an 8" pie plate and will use a 9" next time. I cooked the pie an extra 15 minutes.

Basic Ham and Bean Soup

Fabulous! Used 4 cups chicken broth and 4 cups water. Did not use ham hock. Made a day in advance. When I put in frig, there was a good bit of broth, but the next day the beans had soaked up most of the broth.

Oh my! This is a perfect breakfast to usher in fall! I cut the serving size down to 1, had to keep adding milk a little at a time as the submitter said, and instead of adding cinnamon sugar, I added 1/4 tsp. cinnamon and topped it with Coffee Mate's Italian Sweet Cream liquid creamer. My new favorite breakfast!

OREO Truffles aka OREO Bon Bons

These are wonderful. I mixed the cream cheese into the cookie crumbs using the food processor. Before rolling into balls, I refrigerated the mixture so it would be easier to handle. Can be dipped in white almond coating or Wilton Vanilla Candy Melts.

Mom's Gourmet Grilled Cheese Sandwich

This sandwich takes grilled cheese up quite a few notches. I used slices of Amish White Bread from this site and baked the buttered sandwiches in the oven at 400 degrees for 6-8 minutes per side just because I can get a more even browning that way. I didn't read the recipe closely and put the parmesan inside the sandwich rather than on the outside, but I intend to make my grilled cheese sandwiches this way again.

Amish White Bread

I cut the recipe in half and combined it all in my bread machine on the dough cycle. After that first rise, I took it out and forgot to knead it lightly. I just put it straight into my loaf pan to rise again, yet it still turned out and tasted delicious! I used it to make Mom's Gourmet Grill Cheese Sandwich, and what a wonderful sandwich! This bread made grilled cheese something special!

Lime Chicken Soft Tacos

I was totally surprised at how much I loved the flavors of the lime, red wine vinegar, and oregano in this recipe. I used left-over cooked chicken, added the rest of the ingredients, and simmered it long enough to get it warm. It turned out great! I also put my corn tortillas in a 400 degree oven for 10 minutes, spraying them with cooking spray and salt and turning them over at the halfway mark. A delicious way to use up left-over meat, making it into a new meal.

Very good! Canned jalapenos can be subbed for the fresh jalapeno peppers. Since the seeds are what makes the heat, you can even use less/none of them.

Grands!® Mini Pizzas

I kept the grandgirls last night for a sleepover. They came up with the idea of having a breakfast party. So I decided to have Grands Ham and Cheese Melts, Grandwich Breakfast Sandwiches, and Grands Mini Pizzas. Grands for the Grands breakfast party was a hit! Of course, this was the girls' favorite, probably because they made them! Simple enough for a 2-yr.-old to make with a little supervision.

Broiled Tilapia Parmesan

I'm still learning to broil, so the fact that I couldn't get the topping to brown is my fault, I'm sure. I followed directions and broiled the first side 3 minutes. Then I turned it over and broiled it for 2 more minutes. I added the topping and continued cooking for 3 minutes. I was afraid to keep broiling the fish for fear it would be tough, dry, and overcooked. It turned out delicious, even though it didn't get crusty brown. I'll definitely try this again.

Since I am of that "vintage age," this recipe did bring back wonderful memories as the submitter suggested. An easy to make cheese ball that requires minimum ingredients. Always a hit for a delicious appetizer.
