All-Day Apple Butter

Such an easy recipe. I put my apples in the crockpot at 9:00 at night and cooked them on high 1 hour. I turned the setting to low and went to bed at 10:00. I woke up the next morning to find them all done. I removed the lid and cooked them on high for 2 hours to thicken them up a bit. Wonderful!

There is nothing like homemade applesauce and no comparison to the store-bought variety! I made this last year and froze it but forgot to review it. I am making more now from apples a friend harvested and gave me, but this time with Splenda. Just as delicious!

Pineapple Layer Cake

I made this cake for my mother's 85th birthday party. I used the mandarin syrup as part of the water measurement to make the cake. I also did not drain the pineapple when I made the frosting. Next time, I will cut each layer in half, making a 4-layer cake. There was plenty of frosting to do this and still frost around the outside. Delicious cake. ***I've discovered that I prefer to eat this cake 2 days after making it. It is more moist.

Baked Spaghetti

My daughter gave me this same recipe, except hers calls for FF cottage cheese and just 1 cup mozzarrella. It's delicious and very kid friendly as well. I've also successfully subbed ground turkey for the ground beef.

Apricot Pork Tenderloin

I used a 3.5 lb. tenderloin, but halved the other ingredients (because of the size preserves I had). I omitted the honey completely. I brushed the melted butter on the meat and then seasoned it. I used about 2/3 of the apricot sauce on the meat as it cooked and then served the rest on the side. Delicious!

Pineapple Bake

My family loved this! I decided to use only 1/2 cup Splenda, and it tasted wonderful. Plenty sweet. The cooking time was only about 40 minutes. I will probably omit the cinnamon next time because a pinch really doesn't add to the taste, but it does detract from appearance. ***Oh, My! This stuff is delicious cold, straight from the refrigerator the next day!

Sweet Cottage Cheese and Bananas

If you hate cottage cheese, you MUST give this a try! I used Kraft Simply FF Cottage Cheese and only 1 1/2 tsp. of honey, and it was delicious! Makes a great breakfast or snack.

Denver Omelet Pie

This is a wonderful egg pie! It has so many possible variations. I accidentally used up the hash browns I had bought for this dish, so I grated raw potatoes, baked them for 30 minutes, and added them to the dish. It turned out great. I think this would be really good with bacon too. Next time I make this, I will use just a little less thyme, but that's personal taste.

This is a very easy recipe to scale down to one serving and makes a delicious, healthy breakfast, especially if you top it with unsweetened applesauce and cinnamon. (I used 1 egg, 3 T. skim milk, 1/8 tsp. cinnamon, 1/4 tsp. vanilla extract, and 2 slices of 40 calories-per-slice bread)

This recipe makes great sugar cookies that are going to be iced or sprinkled with colored sugar. Not too sweet. Just right. I topped with Candice's Sugar Cookie Icing.

Corn Pudding V

My version of this dish is to melt the butter in the casserole dish. Then mix the other ingredients together, adding 1 egg and just a touch of salt, and pour on top of the butter. Delicious! Sidenote - this dish works with reduced fat sour cream but isn't as good substituting plain yogurt.
