Mango-Peach Smoothie

This is a very tropical, refreshing smoothie. I froze 1/2 of a fresh peach and 1/2 of a mango together and then made 1 serving of the smoothie with skim milk, orange juice, and 2 packets of Splenda. It was so thick I had a hard time getting it blended, but it sure was worth the effort and the wait! Delicious!

Ham Pinwheels

I know this recipe is meant to be sliced into little appetizer ring servings, but it just seemed like a great lunch idea to me. So I used only 1 T. fat-free cream cheese on my tortilla, lettuce, ham, ribbons of cucumber, and a small sprinkling of 2% cheese and rolled it as directed. I wrapped it in plastic wrap until lunchtime and then just cut it in half and enjoyed. Delicious!

Grilled Bacon Potatoes

I made this recipe by the method rather than using the exact measurements. My potatoes were much smaller than baking potatoes, so I decreased all the other ingredients. I also got to try out the tip I had heard that said to slice the potatoes on the bowl of a wooden spoon to keep from slicing through. It works! I baked these in foil in a 400 degree oven for 1 1/4 hours. The men at dinner really liked this recipe. They said it has a salty/sweet flavor that really complements the potato.

Magic Cookie Bars I

Delicious and very easy to make! I decreased the coconut to 1 cup and added 1 cup peanut butter chips. I even used FF sweetened condensed milk because it's all I had. Will definitely make this recipe again because it uses things I normally keep in the pantry.

Corn On The Cob (Easy Cleaning and Shucking)

This is my favorite way to fix corn on the cob. I've done this for years in the microwave, but the shucking part is new. Works great! Not one silk left on the ear of corn!

This is a new favorite breakfast! I used fat free cottage cheese too and just dumped everything in the food processor, including the raisins. I spread it on toasted Bagel Thins.

Uptown Red Beans and Rice

This is a favorite of ours because it tastes great and is quick and easy to fix. I omit the oil to lessen the calories and add only 8 oz. of the smoked turkey sausage to the rice mix and water. My husband likes to top his with grated sharp cheddar.

The recipe submitter suggested we try this recipe using lemonade instead of cranberry juice, so I did. I like it. The carbonated water cuts the tartness and sweetness of the lemonade.

Sourdough Bread I

I used Sourdough Starter I by Becky Richardson to make this bread. It overflowed the bowl it was in while rising the first time overnight, but thankfully, I had set the bowl on a cookie sheet. The next morning, I scooped up the overflow and incorporated it into the mixture and kneaded it. I wore gloves while I kneaded the bread, and yes, it was sticky, but I didn't add any extra flour to the mixture other than what was on the board underneath. I kept wondering the entire time if it would turn out, or if all this time and energy were for nothing. It took quite a while for the second rise in the loaf pans, but I finally decided to bake it, and it turned out great. I don't care for a really sour bread, so this one is perfect for me. So glad I have more starter in the frig waiting to be fed and made into more bread!

Best Ever Banana Bread

I have tried a lot of banana bread recipes on this site, and so far, this is one of my favorites because of its sweetness. I would like to add more pecans next time. I made 9 mini loaves and cooked them 30-35 minutes.

Slow Cooker White Chili

This is a really good white chili, albeit very different. I really liked the cilantro and lime flavors. Since fresh tomatoes looked terrible, I used a can of diced tomatoes, drained, instead. It's easy, quick, and quite tasty.

Ham and Egg Salad Sandwich Spread

This is the best ham salad I have ever eaten. I say that because I don't particularly care for ham salad yet this was good. I used hamburger dills only because I didn't have any dill pickle relish. I really liked the mayo/Dijon dressing.

Sweet Vanilla Cupcakes

I've never cared for vanilla cake and have found many homemade cakes to be quite dense. Well, this recipe changed my mind completely! These cupcakes are delicious and have that sugar cookie flavor. They are light and airy and just perfect. I made them to top with sweetened strawberries and whipped cream, but I can't wait to make them again with frosting for my grandkids (ok, ok, really for me!)

Garden Stuffed Baked Potatoes

A new favorite stuffed potato! Trying to cut calories, I steamed fresh broccoli and onion together, omitting the butter. Then I also omitted the oil on the outside of the potato. These garden stuffed potatoes were still delicious!

Grilled Peanut Butter and Banana Sandwich

I know a serving of peanut butter is 2 T., but it's just too much for me. 1 T. divided between two slices of bread is plenty to taste yet not have your tongue stick to the roof of your mouth. 1/2 a banana is plenty too. While I have had peanut butter and banana sandwiches before, I've never grilled them until now. I like it.

Jerre's Black Bean and Pork Tenderloin Slow Cooker Chili

I am not a chile connoisseur; my husband is. I discovered that I prefer pork in my chile as opposed to ground beef. Huh...who knew? I really liked this, but I think I would have liked it even better had I used hot salsa instead of mild. My husband added cayenne pepper to his. I was trying to use up foods I already had in my pantry, so I used 1 can of black beans and 2 of light red kidney beans. I will definitely make this again.

Cinnamon Roll-Ups

These are a must make for holidays. They go on the appetizer buffet alongside the sausage balls, chocolate chip cheese ball, and oyster crackers! I also make them for baby and bridal showers.
