Pineapple Cinnamon Stuffed Acorn Squash

So many of the reviews warned against the spices being too overwhelming, so I just sprinkled them to taste. I know I didn't use anywhere near as much as what was called for. In the end, I loved the flavor the pineapple gave as well as the light flavor of the spices.

Extreme Veggie Scrambled Eggs

Mmmm. This is just a scrambled omelet :) I used a red bell pepper instead of green because it's what I had. It made a fabulous entree for breakfast for dinner night.

Mock Oatmeal

I must admit when I read this recipe I found it to be intriguing and...well...odd. Which made me want to try it all the more. Plus I had some left-over low fat ricotta in the frig, so I figured I didn't have anything to lose by trying it. I actually never got around to nuking it because it tasted good cold. Not bad for a 3 point Weight Watchers breakfast. (It doesn't even remotely taste like oatmeal though.)

Healthier Easy Baked Tilapia

I couldn't find just the frozen cauliflower, broccoli, and red pepper, but I could find all those veggies plus corn. It made a beautiful dish, and it was delicious as well. This is such an easy, healthy one-dish meal.

This was perfect for my meatless meal this week! It could use a little more sauce, which I had left over anyway since I cut the recipe in half. I need to remember to lightly salt my pasta next time.

Restaurant-Style Coleslaw II

I've made this coleslaw three times recently and keep forgetting to post a review. Every time I've made it, I've had many compliments. Tonight, I told someone it is supposed to be a KFC copycat recipe and was told it is better than KFC. It goes with burgers, hot dogs, and coleslaw. You just can't go wrong with this recipe. One more thing, I used the bagged coleslaw mix to make life easier.

Blueberry Cream Slushy

One of the things I love about smoothies is the way you can slightly alter the ingredients to use what you have on hand. Instead of all vanilla yogurt, I used 1/2 vanilla and 1/2 strawberry (what was left from another smoothie) and all orange juice instead of the oj/pineapple blend. I omitted the sugar because it was plenty sweet for me. This has a beautiful color and tastes delicious!

Honey Glazed Chicken

This recipe is so easy and quick to fix, and it tastes good too. I used lite soy sauce and only 1 huge chicken breast, but I made the entire amount of sauce so there would be enough to pour over the rice. Definitely a keeper.

Simple Beef Flavored Gravy

Yes, this is simple and it's beef flavored, and the best part is that it uses common pantry staples. It's great to make in a pinch when you don't have any meat drippings or beef broth in the house. I used it to go over rice.

Pecan Dijon Chicken

I couldn't decide whether to make this or not after reading all the reviews. I decided to make it but tasted the sauce before adding the mustard powder. I decided not to add it. The sauce is very thin upon coming out of the oven, but after it sits a bit, it thickens up and makes a nice sauce over rice. I like the crunch of the pecans in this dish.

Chef John's Swedish Meatballs

This review is for the gravy part of this recipe only (although I'm sure the meatballs are fabulous too; after all, this is a Chef John recipe). I made Johnsonville Italian Meatballs and, as an afterthought, decided I wanted a Swedish meatball dish. So I began looking and decided to make this sauce. It is a little bit thinner than what I've had before, but that didn't bother me at all. I didn't add any extra salt or pepper since my meatballs used hot Italian sausage. I served the meatballs and gravy over angel hair pasta.

Yogurt Chicken

I was afraid I wouldn't like the yogurt and lemon juice coating, but I loved it! This is such delicious, moist chicken. I give it 4 stars but only because the recipe calls for regular bread crumbs instead of Italian style which lend much more flavor.

Spinach Lentil Soup

This is a delicious soup, and I left out the meat! I can only imagine how good it would be with the kielbasa. I wanted a lighter lunch, packed full of veggies, so I added more carrot, onion, and diced red pepper, as well as red pepper flakes. (You can add to your own liking - mushrooms, celery, etc.) I saw no reason to cook the rice first, so I just added it in with the lentils to cook, replacing all the water with chicken broth. I halved the recipe and am so glad I have leftovers for more lunches this week.

A healthy, tasty afternoon snack to tie me over till dinnertime. I didn't have the soy milk powder, but it didn't seem to matter. This is certainly a smoothie that will stand up well to variations, like using vanilla yogurt in place of the plain.

Whole Wheat Carrot-Raisin Muffins

I cut the recipe in half and used white whole wheat flour. I also had to use plain yogurt sweetened with honey to taste because I discovered too late that I was out of vanilla yogurt. Because of others' reviews about the muffins being too dry, I added 1 T. unsweetened applesauce. I got exactly 7 muffins, but they did have to cook a few minutes longer. The end result was a moist, slightly sweet muffin. This certainly tastes "healthier," but since I'm trying to cut sugar and unnecessary fats, it's perfect for me.

Spicy Cheese Quick Bread

This is a dense, bread that's tender on the inside and crusty on the outside with a predominant flavor of Italian seasoning and cayenne pepper. I used fat-free half and half and skim milk. This bread was the perfect accompaniment for soup.
