Simple Greek Yogurt Egg Salad

While this is delicious, it is pretty sweet. The brown sugar takes the tang away from the Greek yogurt though. The thing I like about this recipe is that it is easy to adapt to your own preferences: use less brown sugar or sub dill pickle relish to take some of the sweet away, or use Dijon for a slightly different flavor. But it made a really good lunch the way it is written!

Banana Pineapple Green Blend

As the submitter suggested, I subbed a different liquid-almond milk, and this smoothie came out quite good. I even used frozen spinach and the smoothie turned out ice cold, which I like. I did add some Truvia to sweeten it just a bit. A very refreshing smoothie. Perfect for hot summer days!

Quick Avocado Smoothie

Hmmm. Not sure how to rate this smoothie. It was too savory for my taste and I even added 3 packets of Truvia. The avocado makes it very creamy. I used a frozen banana and still added ice to make it really cold. I also think this makes at least 2 servings, maybe more, especially since 1 serving is 555 calories!

Refrigerator Raspberry Oatmeal

I must say as far as refrigerator oatmeals go, this is a really good one. The all fruit preserves I used was all the sweetener I needed. I also subbed golden flax seed for the chia seeds.

Super Summer Kale Salad

Love this salad! The kale came in my CSA box and was my very first experience with it. I subbed considerably less of an erythritol-xylitol blend instead of sugar, yet the dressing was still pretty sweet. The salad itself is sweet with the blueberries and cranberries, so my word of advice is to add sweetener sparingly to your own personal taste. I love all the crunch in this salad!

Perfect Mixed Greens

This is my first time to ever fix greens. I received 10 oz. mustard greens, 10 oz. turnip greens, and not quite 16 oz. collards in my CSA box. I cut this recipe in half and followed the directions...all except for the amount of sugar. I added only 1 T. and it was perfect.

Whole Chicken Slow Cooker Recipe

I love the seasoning on this chicken; however, it is almost the same as this site's Roast Sticky Chicken-Rotisserie Style. This recipe adds an extra 1/2 tsp. cayenne. The good thing about cooking the chicken in the slow cooker is it requires no attention and it is so tender it falls off the bone. The down side? It falls off the bone and lacks in appearance. Still delicious though!

Quick Avocado Salad

This is the first time I've put avocado on a salad, and I discovered I love it! I wanted this salad for my lunch, so I cut it down to 1 serving. Too hard to figure out 1/8 of everything, so I just eyeballed the ingredients and substituted what I happened to have: green leaf lettuce for the romaine, yellow and orange sweet mini peppers for the green. I used 2 slices of bacon, but bacon makes everything better! I was surprised I liked the lime juice for the dressing. But really, this is a very good and light salad!

Avocado Sauce Eggs Benedict

I really wanted to make this recipe but didn't have any English muffins, so I used toast instead, cut into rounds. I sliced my small Roma tomato into 3 thick slices and used all of them. I cut this recipe down to just one serving, and while the salt seemed a little too much for my taste, that is something that can easily be adjusted the next time. Even though this recipe is somewhat time-consuming, it does make for a really nice breakfast that tastes delicious!

Avocado Aioli

Oh. My. Word! I could have eaten the entire recipe of this aioli! What would that be......376 calories plus the mini sweet peppers? I could make a meal out on this! I had a partial bag of peppers that needed to be used (hence, a shriveled pepper here and there), and this recipe complemented them perfectly. This would make a fantastic appetizer for my next party.

Avocado Banana and Walnut Muffins

These muffins don't seem very sweet when they come out of the oven and are eaten warm. Oddly enough, they seem sweeter at room temp. I actually liked them better after they cooled.

This recipe needs more spice and seasoning. Definitely needs salt in the noodles as well as the ground beef mixture. Next time, I'd also like to use Italian tomatoes rather than plain ones.

Avocado Cheesecake with Walnut Crust

This "cheesecake's" texture was a little off-putting. Not thick like a cheesecake, but definitely silky and creamy. Like others, I also tasted a key lime undertone. It definitely needs the raspberry sauce for the sweetness. I can't say I disliked it, but it wasn't a dessert my family cared for, not even my avocado-loving daughter.

Quick Spicy Sausage Corn Chowder

My husband and I really enjoyed this chowder! I used Jimmy Dean Hot breakfast sausage, so I didn't add the cayenne pepper (yes, I'm a wuss). My husband added the cayenne to his bowl at the table (he's not a wuss). I used evaporated skim milk because it's what I had and this still turned out great. I'm sure the regular evaporated milk or even half-and-half or whipping cream would have made it thicker and more chowder-like.

Sugar-Free and Dairy-Free Slow Cooker Steel-Cut Oatmeal

I followed the recipe as far as ingredients go, omitting the optional raisins. I have 3 slow cookers, but not one has a medium setting. I used the smallest one, a 2-quart slow cooker. I used the HIGH setting and stirred at the end of each hour for 2 hours. Then I turned it to LOW for another hour, stirring after each half hour segment. I understand some people do not want sugar, and I can respect that. I prefer a small amount of erythritol/stevia blend and added it at the end before I filled 6 small half pint jars. Now I have breakfast ready for the week and can add berries or nothing at all. ***Update - This is delicious cold even! A great grab-n-go breakfast!

Bierrocks II

This was my first time making and eating bierrocks. They were delicious! I found it difficult to roll out the bread dough, but it was certainly worth the effort. I substituted Johnsonville Sweet Italian Sausage for the ground beef and then added the salt and pepper to taste, using less than 1/2 tsp. of each.

Zucchini Pie

How can two people be so different? I LOVED this side dish; my husband thought it was just ok. But I'm the allrecipes cook, so 5 stars it is! I grated the zucchini instead of leaving it in chunks. It and the onion cooked perfectly in the allotted time.

Refried Bean and Cheese Enchiladas

I made these exactly by the recipe for a small group of 14. Everyone seemed to like them, but no one raved over them. I appreciated the directions given for heating 3 corn tortillas in the microwave and then dipping them in the enchilada sauce before filling and rolling up. I've always had problems with corn tortillas breaking, but these rolled up perfectly.

Over the Top Nachos

I wouldn't have cared for this recipe had I not put Taco Seasoning in the meat. That addition did put them over the top, but without it, these are pretty bland. ***UPDATE 4/12/14 I followed this recipe exactly except I subbed Johnsonville Italian Hot Sausage for the ground beef (no salt or pepper was needed). I liked the sausage much better than the beef. Spicier and more flavor. The sausage definitely took these nachos "over the top" to 5 stars or higher!
