Broccoli-Cauliflower Salad

One of the things I love about this site is the reviews by home cooks. I took their advice and cut the amount of dressing by half and lessened the sweetness considerably, using a stevia-erythritol substitute. So glad I did. I decided not to measure the eggs, just adding two to the overall mix. Such an easy, delicious salad.

Balsamic Marinated Chicken Breasts

I used half golden balsamic and half dark balsamic. Not a favorite of mine. The balsamic flavor is rather strong. And as others have already said, the spices don't rise above that vinegar flavor.

Spinach and Kale Smoothie

I used 2 cups of baby spinach I had frozen as well as golden flax seeds instead of the chia. I couldn't taste the spinach or the kale...mostly peanut butter and banana. I did add 2 packets of Truvia as a personal preference for more sweetness. It made a breakfast that I felt was nutritious and healthy, and it was a beautiful shade of green and tasted good!

Stuffed Peppers

This recipe seemed doomed for failure from the beginning due to my inattention...but it turned out great! I wanted to use some leftover rice but didn't have quite enough, so I added onions and the pepper tops to the ground beef as it browned, hoping they would take up some of the space that extra rice would incorporate. Then I goofed up and added the Italian seasoning to the beef mixture instead of the tomato sauce. I decided to add 1/4 tsp. Italian seasoning and 1/4 tsp. garlic powder to the sauce anyway to pour over the tops of the peppers. I also didn't baste...there was nothing to baste with! At the end of the cooking time, I topped the peppers with some mozzarella cheese. These turned out delicious!

Cottage Cheese Bake

I really like this. I used Daisy 2% low-fat cottage cheese and added the garlic powder, salt, and pepper before cooking. So glad I added the optional garlic powder. It gave this a great flavor. I ended up cooking it about 35 minutes. After I cut it, there was a very small pool of liquid in the bottom of the dish and on the plates that took away from the appearance just a little. This might not have happened had I used a full fat cottage cheese. I made this for a side to salmon, but I see enjoying it for lunch too.

Taco-Seasoned Salmon

Turkey and Feta Grilled Sandwich

I really like the flavors here: the turkey, the dressing, and the feta. I don't care for the fact that the lettuce wilts. Next time I will omit it and put it on after cooking. I also will use less butter to fry it. The sandwich came out too greasy for me.

Tasty Strawberry Smoothie

A delicious breakfast this morning! It might not have been necessary, but I ground the oats a little first. I subbed unsweetened almond milk for the low-fat milk (which I assumed meant skim) and I used Chobani non-fat strawberry Greek yogurt. Then I added everything else. Smooth and creamy!

Super Smoothie

I was very hesitant about the cucumber in this smoothie, but it's just barely detectable and actually gives it a really fresh taste. I can see making this on a really hot day to cool off...it's that refreshing. Since the calorie count is so low, I actually drank 2 servings (cutting the recipe in half for just me).

Simple Greek Yogurt Egg Salad

While this is delicious, it is pretty sweet. The brown sugar takes the tang away from the Greek yogurt though. The thing I like about this recipe is that it is easy to adapt to your own preferences: use less brown sugar or sub dill pickle relish to take some of the sweet away, or use Dijon for a slightly different flavor. But it made a really good lunch the way it is written!

Banana Pineapple Green Blend

As the submitter suggested, I subbed a different liquid-almond milk, and this smoothie came out quite good. I even used frozen spinach and the smoothie turned out ice cold, which I like. I did add some Truvia to sweeten it just a bit. A very refreshing smoothie. Perfect for hot summer days!

Quick Avocado Smoothie

Hmmm. Not sure how to rate this smoothie. It was too savory for my taste and I even added 3 packets of Truvia. The avocado makes it very creamy. I used a frozen banana and still added ice to make it really cold. I also think this makes at least 2 servings, maybe more, especially since 1 serving is 555 calories!

Refrigerator Raspberry Oatmeal

I must say as far as refrigerator oatmeals go, this is a really good one. The all fruit preserves I used was all the sweetener I needed. I also subbed golden flax seed for the chia seeds.

Super Summer Kale Salad

Love this salad! The kale came in my CSA box and was my very first experience with it. I subbed considerably less of an erythritol-xylitol blend instead of sugar, yet the dressing was still pretty sweet. The salad itself is sweet with the blueberries and cranberries, so my word of advice is to add sweetener sparingly to your own personal taste. I love all the crunch in this salad!

Perfect Mixed Greens

This is my first time to ever fix greens. I received 10 oz. mustard greens, 10 oz. turnip greens, and not quite 16 oz. collards in my CSA box. I cut this recipe in half and followed the directions...all except for the amount of sugar. I added only 1 T. and it was perfect.

Whole Chicken Slow Cooker Recipe

I love the seasoning on this chicken; however, it is almost the same as this site's Roast Sticky Chicken-Rotisserie Style. This recipe adds an extra 1/2 tsp. cayenne. The good thing about cooking the chicken in the slow cooker is it requires no attention and it is so tender it falls off the bone. The down side? It falls off the bone and lacks in appearance. Still delicious though!
