Breakfast Pizza

I own a pizza stone and a pizza pan with holes in the bottom, neither of which is appropriate for this dish. So I decided to use an oblong casserole dish and it worked very well. I even got mixed up with the layering and it still turned out well. A delicious breakfast casserole which I had for dinner.

Slow Cooker White Chili

This is a really good white chili, albeit very different. I really liked the cilantro and lime flavors. Since fresh tomatoes looked terrible, I used a can of diced tomatoes, drained, instead. It's easy, quick, and quite tasty.

White Chip Orange Cookies

I love the fresh orange zest in these. It's the perfect amount for my taste. This is a great cookie for a Christmas tray or even a ladies tea. It's delicate and not heavy on the chocolate.

Cappuccino Muffins with Chocolate and Cranberries

Wow, there is so much going on in these muffins! They are a lighter, cake-like muffin. The orange and chocolate flavors are predominant with only slight undertones of the cranberries and coffee. Personally, I would prefer these for an after dinner sweet rather than breakfast. I made the entire recipe and got 22 muffins. I hope they freeze well. **Update - Oddly enough, the next day after having sat under a cake dome, these muffins were not cake-like at all. They had more of a muffin texture.

Oatmeal Chocolate Coconut Macaroons

I cut this recipe in half. I dropped them in small 2-3 bite sizes and still had 31 of them! This cookie is similar to the no-bake kind with peanut butter in them, but I like them precisely because they aren't made with peanut butter. The coconut flavor really shines in this easy, easy cookie.

I've been wanting to try this recipe for quite some time. Tonight, I needed a quick and easy recipe, and this was certainly it. I used some thawed, left-over chicken sausage I'd had in the freezer and threw this together in less than 30 minutes.

I cut this recipe in half and amazingly had exactly 3 dozen pieces! While this isn't my favorite, it is extremely quick and easy to put together. It makes a great last minute sweet to carry somewhere or give as a hostess gift.

Sweet Potato and Banana Smoothie

This smoothie makes me feel as though I'm eating healthy and getting my veggies in for breakfast! I froze the banana and used skim milk. I felt it needed a sweetener of some kind, so I added Splenda to mine.

I liked this enough to try it again, only next time, I want to try regular vinegar instead of cider vinegar. The cider made it entirely too tart and tangy for me.

Jumbo Dark Chocolate Cookies

Oh my! These will definitely work when I need a "chocolate fix," and I didn't even use the dark chocolate! I used semi-sweet chocolate and made smaller cookies. My cookie scoop held 4 tsp. of dough. I baked the cookies for 13 minutes and got 2 dozen. Delicious!

Best Ever Banana Bread

I have tried a lot of banana bread recipes on this site, and so far, this is one of my favorites because of its sweetness. I would like to add more pecans next time. I made 9 mini loaves and cooked them 30-35 minutes.

Salisbury Steak with Mushrooms

Ahhhh. This is pure Southern comfort food! I followed the recipe exactly until the very end. I didn't use all of the cornstarch mixture...just enough to thicken the gravy to my liking. Tastes great served with mashed potatoes.

These are super easy and quick to throw together. I used a 1 1/2 tsp. cookie scoop and got 30 balls out of the recipe. I think they are better kept cold in the refrigerator since they aren't so sticky that way.

Better Than Sex Cake II

I do what the most helpful reviewer does: Right when I pull the cake out of the oven, I take the handle of a wooden spoon and poke holes all over the cake (it doesn't matter if you hit the bottom of the pan or not). I then poor the caramel directly into the holes and then do the same with a full can of sweetened condensed milk. Once the cake cools, I top it with the Cool Whip and then top that with the toffee bars crunched up (Heath & Skor bars seem to work very well). I also make this cake 2 days in advance so it will be more moist and gooey.

Slow Cooker Chicken and Dressing

I submitted this recipe and think the cornbread is very important. If I use Jiffy, I make 2 packages of it. If I make my cornbread from scratch, I mix together 2 c. self-rising cornmeal, 1/4 cup oil, 1 1/4 cups milk, and 1 egg. I then bake the cornbread in a black skillet at 450 degrees until it is browned. Also, when I put this recipe together, I just stir everything together rather than layer it.
