Instant Hot Cocoa Mix

This mix was too thin and watery for my taste using it in water, but the next time I added it to milk and it was creamier and much better. I like that it uses Splenda instead of sugar, making for a lighter hot cocoa.

Rolled Dumplings

I rolled these as thin as I could and they still puffed up a bit. I cooked them in two batches and ended up needing more broth. Next time, I will use three cans of chicken broth and will cook them all at the same time rather than in batches. (I always add 1/4 tsp. poultry seasoning to the broth because I like that seasoning in my dumplings.) These had a good flavor.

Scalloped Potatoes II

So, so easy to make and delicious. I added onions and used Lactose free milk. I did have to cook the dish at 425 degrees for 15 minutes, not 5 minutes, before turning the oven down to 375 degrees.

The 2 tablespoons of milk wasn't enough for me, so I then added some International Delight Cinnabon flavored creamer. Oh my! A delicious afternoon pick-me-up!

Ham Pinwheels

I know this recipe is meant to be sliced into little appetizer ring servings, but it just seemed like a great lunch idea to me. So I used only 1 T. fat-free cream cheese on my tortilla, lettuce, ham, ribbons of cucumber, and a small sprinkling of 2% cheese and rolled it as directed. I wrapped it in plastic wrap until lunchtime and then just cut it in half and enjoyed. Delicious!

Another wonderful baked fries recipe! I liked the cooking method as well as the spice mixture. I've never put the spice mixture on after the potatoes cooked, but it works quite well.

Grilled Pineapple Chicken Sandwiches

Good basic grilled chicken sandwich. I used Chef John's Honey Mustard Sauce Recipe and cooked this on my George Foreman. The meat did need salt and pepper.

Garden Stuffed Baked Potatoes

A new favorite stuffed potato! Trying to cut calories, I steamed fresh broccoli and onion together, omitting the butter. Then I also omitted the oil on the outside of the potato. These garden stuffed potatoes were still delicious!

Creamy Lemon Chicken

Because I was afraid 3 T. of lemon juice would be too strong for mine and my husband's tastes, I began with 2 T. and am very glad I did. Had I added the full amount, it would have been entirely too strong a flavor for our liking. We did not particularly enjoy this recipe.

Apple Toast

A delicious concept; however, I burnt the first two pieces I tried to make because I left them in for about 3 minutes. So, I tried again. This time I took the toast out after only 2 minutes, and the apples were still crisp, not cooked through. I want to try what lynnb did and bake this at 400 degrees for 10 minutes. I'll report back how that works.

Peanut Butter Banana Smoothie

This is a delicious and refreshing smoothie. I used frozen banana chunks, so I also omitted the ice. And I thought it was plenty sweet, so I omitted the honey as well. Also, a tweak to decrease fat and calories is to use PB2 in place of the peanut butter.

The recipe submitter suggested we try this recipe using lemonade instead of cranberry juice, so I did. I like it. The carbonated water cuts the tartness and sweetness of the lemonade.

Quick and Easy Pizza Crust

Certainly quick...and easy. I made Gourmet Chicken Pizza using this as the crust. Next time, I will let it rise a bit longer (maybe 10-15 minutes) after putting it on the pizza pan and before adding the ingredients.

I wouldn't call it gourmet, but my husband and I liked it. I made my own pizza crust, but otherwise followed the recipe. Next time, I will cook my crust about 10 minutes before adding the other ingredients.

Cream of Tomato Soup

The key here is EASY. I used fat-free evaporated milk and added it in with the tomato juice. After tasting, I decided to puree the soup to make it smooth with no onion bits in it and added garlic powder and a little Splenda as well.

Dominican Style Oatmeal
