Savory Cheddar Zucchini Muffins

I needed to use some zucchini I had, so this recipe helped do that. While I wouldn't say these muffins were bland, I do think for my personal taste they need more flavor. Definitely a little more salt and perhaps some finely diced onion.

Soft Oatmeal Cookies

A wonderful oatmeal cookie with a crunchy outside and chewy interior. I used my cookie scoop that measures about a heaping tablespoon and got 3 dozen cookies. Cooked each batch of 12 for 10 minutes.

Thousand Island Dressing II

Quick Quiche

I like the idea of no crust. Another thing I like about this recipe is the possible variations. I used pepper jack cheese and mozzarella because it's what I had. I used a combination of fat free half and half and skim milk, again because it's what I had. And I added fresh spinach. Still very good.

Better-Than-Ever Beef Enchiladas

I adapted this by using left-overs from Charley's Slow Cooker Mexican Style Beef. I used only the beef and peppers inside the tortilla omitting the salsa. I did add it on the bottom of the casserole dish. I liked the flavor of the dressing on the tortillas but think I would prefer this made with corn tortillas.

Charley's Slow Cooker Mexican Style Meat

I followed the directions Impish gave in the Oct. 1, 2006 review, adding the cumin and paprika after the roast was shredded and returned to the slow cooker. I omitted the bottle of hot sauce for fear I wouldn't be able to eat it. Glad I did. My husband added more at the table. We ate this in tortillas with lettuce, cheese, and tomatoes.

Whole Wheat, Oatmeal, and Banana Pancakes

I made half a recipe, measured the pancake batter by 1/4 cup, and came out with 9 of them. I followed the recipe exactly and found them a little dense, which I expected due to the whole wheat flour. Still good though, especially topped with strawberries and bananas. I felt that I had made a healthy breakfast since I used whole wheat flour, skim milk, and fruit but had not sacrificed on flavor.

Quick Pork Fried Rice

What a wonderful recipe to make with left-over pork chops! My cooking method may have been slightly different, and I added more pork, more light soy sauce, green peas, and eggs. But that doesn't change the fact that this is a wonderful recipe to suit your own family's taste.

Grilled Peanut Butter and Banana Sandwich

I know a serving of peanut butter is 2 T., but it's just too much for me. 1 T. divided between two slices of bread is plenty to taste yet not have your tongue stick to the roof of your mouth. 1/2 a banana is plenty too. While I have had peanut butter and banana sandwiches before, I've never grilled them until now. I like it.

Three Pepper Chicken

While this is very good, it does need some tweaking for next time. Even though the chicken is covered in saltines, it still needs more salt, as do the veggies. I cooked the veggies in only 1/2 T. butter. I added the rest to cook the chicken, not just brown it. The butter wasn't really enough, but I was using a non-stick pan, so it was fine. Next time, I will double the chicken broth and flour since it really wasn't enough to even moisten the pasta I topped it with. Then it might not qualify for a healthy MyPlate recipe, but it will taste better :)

Emmi's Banana Wraps

Oh, my! This takes a peanut butter and banana sandwich to a whole new level! I used a low carb/high fiber tortilla instead of whole wheat, and I made my own granola using Stovetop Granola from this site. Best lunch I've had in quite a while.

Black Beans and Pork Chops

I needed to not have to stand and cook this, so I put it all in the slow cooker. I did season the pork shops with garlic salt and a light sprinkle of cumin. Not outstanding, but good and tender.

Garlic Mashed Cauliflower

Oh. My. Goodness. This is unbelievable! I have tried mashed cauliflower before and it was terrible. I don't know if this is so good because of steaming it or using the food processor instead of a mixer or adding cream cheese and parm. But whatever it is, I'm not messing with it! My husband even thought he was eating mashed potatoes (just not my usual ones :) I will definitely make this again. ***7/31/13 - I made this again and messed with it :) I used Laughing Cow Light Garlic and Herb Cheese Wedges and refrigerated minced garlic. I also used my immersion blender which worked very well. Came out great and was even easier to make with less clean up.

Spanish Potato Omelet

This tastes delicious and is perfect for breakfast or dinner! Two things I will need to address next time I fix this: 1) Too much oil. I think I could cut it in half. 2) This time, I added the onions when I turned the potatoes over but then had to remove the browned potatoes so the onions could cook further. Perhaps next time, I should add them halfway through the cooking time of the first side, at maybe the 5 minute mark? There will definitely be a next as this is a delicious, filling meal.

Yummy Honey Mustard Dipping Sauce

This dipping sauce was too heavy on the mustard with not enough honey for my taste. Problem solved with just a little extra honey added. My 2 yr-old and 5 yr.-old grands loved dipping their homemade chicken nuggets in it.

Really, Truly Gorgeous Dried Fruit Salad

I used what dried fruits I had. No figs, so I used cherries instead. No dark raisins, so I doubled the golden ones. The apricots give this salad color, so I might add just a few more next time. I did cut them up at the end to spread the color out. I didn't want to wait overnight, so I put them in the water and brought them to a boil. Then I covered the pot, removed them from the heat, and let them sit for an hour. After that I continued with the recipe and they turned out just fine. This is delicious and reminds me of warm fruit compotes I've had before. Definitely delicious for any occasion even if not really, truly gorgeous.

A quick and easy breakfast. I used strawberries in place of the blackberries, but frankly, you could use any fruit. Since I didn't have any granola, I made Stovetop Granola from this site.
