Maple-Brined Pork Loin

We loved this recipe at my house. The meat was juicy and very flavorful. Pork loin is very inexpensive here in Indiana so I buy it often, but it is always dry and bland. This simple and inexpensive brine turns it into something special!

Chili Casserole with Egg Noodles

This was not bad. It was flavorful and filling and a good budgetwise choice. Next time I will drain the beef after browining it. It was very greasy. I thought it was odd that the recipe didn't say to drain it,but I always follow the recipe the first time I make something. We topped it with sour creme which was good.

Chocolate Mousse

Very simple and rich. My family inhaled it. It is a tad bitter - like dark chocolate and my boys would have preferred more of a milk chocolate taste. Next time I will use milk chocolate chips.

Bananas 'N' Cream Bundt Cake

This was moist and rich like I hoped it would be, but it tasted to me like banana bread, not cake. I was hoping for more of a cake-like texture so it wasn't a favorite for me.

My Amish Friend's Caramel Corn

Omigosh! This is so delicious I could not stop eating it. You will never eat caramel corn from a box again. It is simple yet time-consuming. I used butter as I never buy margerine and it was perfect. Three bags of Boyscout butter light popcorn made the perfect amount. I followed a previous reviewer's advice and used my roasting pan. Worked beautifully. Rather than pouring it out on the counter, I left in the pan and stirred it every few minutes while it cooled - no problems. Thanks for the great recipe!

Strawberry Dream Cake I

This cake was very moist and dense. However, the strawberry flavor was very subtle. My son guessed that it was banana at first. Also, it is a strange color. The frosting was good and fluffy, I would make the frosting again, but probably not the cake.

Broccoli and Tortellini Salad

Cream Cheese Sugar Cookies

This is a great sugar cookie for cutouts. I let it chill over night and the dough emerged as hard as a rock! I had to let it warm up about 30 minutes before I could even begin to work with it. Next time, I won't let it chill so long. It was easy to cut and held its shape well while baking. The flavor is very good and my children enjoyed them. I frosted them with sugar cookie icing from this site.

Golden Knots

I made these rolls in a half batch and my kids ate them so fast they didn't have time to cool! So, I'm making a full batch today. They taste like the delicious sweet rolls served at O'Charie's Restaurant. My problem is that the dough is so wet and sticky that I can't even knead it! I finally gave up, after making a big mess and let my Kitchenaid do it. I added and extra 3/4 cup of flour, but no more for fear they would get tough. Even then it was too sticky. It makes it very hard to handle. Am I doing something wrong? They are very yummy though and worth the trouble.
