Unstuffing Side Dish

I made this for Christmas dinner. I thought it was great! My wife didn't like it, as she prefers the traditional stuffing instead. Still good, though.

Chili Barbecue Chops

Very, very good. I had six center cut chops, the typical kind from the supermarket. I increased the marinate to 3/4 cup each dressing and BBQ sauce (Sweet Baby Ray's), and kept the chili powder at the recipe level. I put the chops and all but 1/2 cup of the marinate in a plastic bag, and refrigerated them for about 6 hours, turning them over 3 times. I used a wok to brown and finish them. Browning was about 4 minutes per side. I stacked them all in the wok after browning, and poured on the extra marinate. It wasn't quite enough, so I make another 3/4 cup, but left out the chili powder this go-round. I let it simmer about 30 minutes. They weren't dry at all, and the sauce was exceptional. Definitely a keeper.

Slow Cooker Chicken and Dumplings

This was pretty good. I usually make my C'N D from scratch, but was looking at something quicker. So, no slow cooker. I used a dutch oven, put in the soups, added chicken broth, and leftover turkey from Thanksgiving. I rolled out each individual Texas size biscuits from the local IGA (1 can), and put them into the slow boil soup. I covered it for 15 minutes, then let it go 10 minutes uncovered. My wife and FIL could'nt tell it wasn't the scratch version.

Pan-Roasted Steak and Onions

I cooked this for my wife and FIL. They thought it pretty good. They don't like onions, so I left them out, and just worked the flank steak. I left the stock at 1/2 cup, since it was sans onions. Way easy, I'll be making this again.

Scalloped Cheese Potatoes

This is a pretty good recipe. I made it per instructions and I reduced the servings to 4 instead of 12. I think it may need a little milk to up the creaminess factor, but that's the way we like it.

Holiday Cranberry Sauce

Chicken Enchilada Casserole II

The look and plating of the casserole is somewhat loose. But, the taste is great!. I cooked boneless chicken breasts in 16oz of Pace medium picante for a couple of hours on low heat, then shredded the meat. As previously mentioned, I only put in 8oz of sour cream. It didn't need any more than that. We will be making this on a regular basis.

Sunday Brunch Casserole

This came out pretty good, my wife and father in law liked it a lot. I added a bit of cayenne, and left out the dill weed since I didn't have any. I was asked to make it again next weekend.

Sarge's EZ Pulled Pork BBQ

True to his word, Sarge's bbq pork is great. I had a 5 lb boneless shoulder. Seasoned it with seasoning salt, pepper, onion powder, garlic powder, and paprika. I upped the coffee to 1 cup, which I added to one cup of beef broth. I put it in the cooker at 8:30am, it's now 3:30 pm, pulled, and back into the crock with 1/2 bottle of Ray's with a cup of the drippings. My wife loves it! Thanks, Sarge.

Spicy Beef Curry Stew for the Slow Cooker

Like some others, I found this was good, but the curry componenet was barely noticeable. It ended up as a basic stew, more or less. It was still good, though.

Easy Beef Strogonoff

This was pretty good as a base. My wife loved it. I left out the sour cream, and used onion and garlic powder since she doesn't like onions. I also added a tablespooon of dijon mustard. We'll make it again.

Baked Stuffed Tomatoes

I make spinach stuffed tomatoes occasionally, it's a side dish favorite. I made this for my wife last night. I left out the bell pepper, she don't care for that. But the bacon was a hit! Plus, I mixed in some shredded cheddar, and covered the tomato with a slice of provolone about 3 minutes before taking it out of the oven. She gave it 5 stars.

Chicken Tortilla Soup II

I usually do a lighter torilla soup, and thought the amount of tomatoes would not be good. I was wrong. This is great - I added one chopped jalapeno to the cilanto/onion, and it turned out great.

Shrimp and Andouille Sausage with Mustard Sauce

I used hot Italian sausage, spicy brown mustard, half and half, and thawed frozen shrimp. Other than that, followed the recipe pretty close. The sauce was a bit grainy, but it was appearance only. The taste was great. My family says this is a keeper

Grandma's Pear Preserves

I did this in large part based on the reviews. I must have done something wrong - the liquid, after 2 weeks, is no where close to set - it's of a light syrup consistency. I didn't deviate from the recipe, or so I thought.
