Bok Choy Steamed Rice

Love the concept of healthy and creative! This is what interested me in this recipe. I was pleased with the it however, after following the directions my rice did not cook through. It has promise but, I think the time needs to be adjusted.

No-Noodle Zucchini Lasagna

Made this tonight. Awesome recipe. My husband loved it and said he did not miss the pasta. In his words, "you can make this for me every night"! Kinda a hit cause I am Italian and love pasta but with that I love it when those I cook for are happy. We have been married 42 years. Thanks for a new healthy twist! I did follow others advise and baked the zucchini at 325 degrees for 10 min. to try and bring out the water. I also substituted a jar of marinara for the homemade sauce. It was delicious!

Easter Leg of Lamb

Very tender and moist. We cooked until the roast reached 130 degrees. We like our lamb med. rare. Then we let it rest for ten minutes which continues the cooking process. We adjusted the amount of salt and pepper to 1 T of each. For us, this was plenty. We love the flavors of the coating and would not change a thing more. Thanks for a delicious roast. I know what I will be making for Easter and other times as well!

Zuppa Di Pesce Fra Di Avolo

Excellent recipe! Made this for 4, left out the scallops and littlenecks just because we didn't have any. Otherwise, we followed the recipe as written and it came out with great results. This is the kind of recipe that you can vary slightly to adapt to your needs and taste. We substituted the water with the juice of the chopped clams. This added to the flavor. Thanks for a great recipe. Will make again.

Baked Dijon Salmon

Company fare! This wonderful recipe is perfect. I did not have pecans so I substituted chopped pistachios. The topping was crunchy and very tasty. It is now in my company folder as it is a recipe that I would be proud to serve to my guests.I am looking forward to trying with the pecans. Thank you for a great recipe.

Apple Tarte Tatin

I was looking for alot more from this recipe. Difficulties started with the clarity of the directions. I wasn't sure whether this called for melted butter or not in step two. The directions state to coat bottom of pan with butter, which seems to mean in order to coat, it needs to be melted however then, when placed on stove in step 4, it calls for cooking until butter melts. Which is it? When I went to flip the tarte in was stuck to the bottom of the pan. I had visions of a beautiful tarte and instead it turned into a mess. I ended up using a spatula to get it out and there was no presentation to it at all. To top it all off, it was bland. This needs some cinnamon and nutmeg. Will not be making again. Sorry Chef John. I am usually a big fan.

French Onion Soup with Homemade Beef Stock

In my quest for the perfect onion soup, I came across this recipe. I am sorry to say that it just did not work for us. It is far removed from the classic french onion soup that we all think of. It was time consuming, which I can handle if the rewards and effort pay off. I think that the parsnips were too strong in the stock. I was attracted to this because it sounded so healthy with all the veggies. The color was lacking even though I browned the beef first. I think that some amount of red wine is vital to rceipe or it is just not french onion soup. I will continue on my quest but do thank you for you spuring me on and for a good stock for vegetable soup.

Holiday Shrimp Dip

Perfect dip for the holidays and beyond! Love the color.I substituted fresh chopped shrimp for the canned and added some chopped green onion. Very tasty and totally additive. I could eat the whole dip myself! Thank you for providing this recipe and making the holiday more fun through ease of prep and tastiness.

Portuguese Cod Fish Casserole

We love baked cod and are always looking for new ways to prepare. I followed others suggestions and used fresh cod, skipped the potatoes because we are on a low carb diet and halved the red pepper (personal taste). I added salt to the sauce since this was not salted cod that I was using.I left out the paprika because I didn't have any on hand. Even before cooking,I found the sauce to be wonderful. We are tempted to use it alone as a dipping sauce,very yummy! I did add pitted black olives at the end since this is the way our local Portuguese restaurant serves this. Will definately make again and highly recommend! Thanks for a great recipe!

Pineapple Upside-Down Cake VII

Great recipe! Will be making this many, many times more! It was a huge hit! I did follow others advice by using PAM to coat the pan and a yellow cake mix. I also soaked the pineapple rings in rum for 1 hour for the "adult" version. Using the drained pineapple juice and water to get the right amount of liquid for the mix added alot. Easy, Pretty and soooo Good. You cannot go wrong with this recipe. I served with fresh whipped cream.
