Maine Venison Stew

Excellent recipe! My oldest got his first deer this year. The first recipe we tried was this one. The one modification I made was to shake the venison cubes in a mixture of flour, salt, pepper, garlic and onion powders and quickly fry them in canola oil before adding to the pot. Then I deglazed the pan with beef stock and added that to the stew. Delicious!

Pumpkin Roll I

This is the easiest pumpkin roll recipe I've ever made. It's delicious as well. Two hints to help it turn out every time: 1) Spray the pan with cooking oil spray, then line with parchment paper to make the cake turn out flawlessly, and 2) Be sure to sprinkle powdered sugar all over the cotton towel before rolling the cake the first time. Royal Icing II

Strawberry Swirl Cheesecake Bars

This was delicious and simple to make. It is definitely better cold, so chill thoroughly before serving. I was missing two ingredients: cinnamon graham crackers and frozen strawberries. I used regular graham crackers, but added a sprinkle of sugar and cinnamon to them which worked fine. I had fresh strawberries, so I pureed them and added 1/4 cup sugar and a splash of water, then cooked them with the cornstarch. My bars weren't as pretty as the picture - my berries stayed foamy - but they tasted wonderful. I will make these again - I'd like to try them with the frozen berries next time.

Egg Paint

I added a little water (maybe 1/2 tsp) to my yolk. I only needed a tiny bit of "paint", so I divided it and colored it pink, teal, and purple. I used this to paint Easter egg shapes cut out of pie crust. The colors deepened as the shapes baked and the results were very pretty. I used these to top a pumpkin pie. This is a great method for adding color without adding sugar.

Apple Coffee Cake

This is a delicious recipe. My husband is diabetic, so I did use some Splenda in place of some of the white sugar. I found the batter to be very thick, so I added about 2 TBSP of milk to loosen it up a bit. Though delicious alone, I felt like experimenting and added a glaze made with 1 cup powdered sugar, 1 tsp vanilla extract, 1 tsp cinnamon, and enough water to make it drizzling consistency. This added to the overall look of the cake. I didn't have any problems with the cake sticking to the pan. I used cake release spray, which I use with all my cakes. Thanks for a keeper!

Tropical Triple Treat Banana Muffins

Delicious! I halved the recipe and made 4 mini-loaves which baked for around 30 minutes. I was still shy of enough banana, so I added half a cup of crushed pineapple and threw in half a cup of coconut because it just seemed to go with the tropical theme I was getting into. This recipe is a great starting point and can easily be adapted.

Hoe Cakes

I thought these were very tasty - excellent with chili! They are incredibly simple to make. My recommendation is to let the batter sit for several minutes before dropping onto the hot griddle. It thickens up a bit when it sits. Thanks for a keeper!

Ice Cream Base

This is a delicious, classic ice cream. It's incredibly creamy - heavenly on a hot, steamy, summer day. I used a scant 1/2 cup of dark cocoa powder and it was the perfect chocolate ice cream. I plan on making this again very soon with strawberries and blackberries as both are going wild right now! Thanks for a great recipe!

Orange Sunshine Cake

This recipe has been a family favorite for years. I do not use pudding mix in the batter - it all goes in the frosting. Let the frosting sit for a while before topping the cake for better texture. I make two layers and slice them to make four layers in all.

Mozzarella Basil Bread

This bread is absolutely delicious! I used fresh basil (triple the amount) since I have a seemingly endless supply in the garden. I otherwise followed the recipe exactly. I did have to add in at least an extra cup of flour during kneading. The recipe makes two LARGE loaves. My husband and oldest son loved this one. Thanks for sharing!

Cranberry Oat Bars

These are simple to make and delicious. I used frozen cranberries and added about 1 TBSP of orange juice during the cooking process. I also used my food processor to make the crumb crust/topping. I mixed the dry ingredients first, then added chunks of cold butter and pulsed until I had crumbs. My coworkers enjoyed these. I cut them into triangles for serving.
