Chicken Pilaf Saute

I really enjoyed this. I used fresh thyme, but my tomatoes are kaput, so I used a can of diced. If I make this again, I will keep the almonds out and sprinkle them on at the end. Though I liked them, my husband didn't care for them.

Chops in Mushroom Gravy

Tasty and easy. My chops were a little on the thick side, so I had to cook this longer than the stated time. I served it with rosemary roasted potatoes.

Pasta Fagioli II

This is a little more work than other recipes, but so worth it! I used fresh herbs as I had them growing outside my kitchen. When the time came to fish out the garlic cloves, I couldn't find all of them. I smashed what I found and returned it to the pot. I never did find the others. This was delicious served with Beer Bread I from this site. I'll be making this again!

White Cheddar Macaroni with Bacon and Thyme

This is a definite keeper! Although I served this as a side dish with chicken, it would easily stand alone as a main course. I halved the recipe and baked in an 8x8 casserole dish.

I loved this. I skipped the cheesecloth and just strained before serving. I served this with Cranberry-Nut Oatmeal Cookies. Delicious!

Delicious! If you like a cookie that's crunchy outside and chewy inside, these will make you happy. Cranberries and pecans are an awesome combination.

Strawberry Salad I

Very tasty salad. I was pleasantly surprised by the dressing. The poppy seeds really added to it. I used regular Miracle Whip as it was all I had on hand. I'll cut back on the onions next time as they were a bit strong.

Hurry-Up Ham Carbonara

This was quick and simple to make. I cut back on the oil a bit. I did add frozen peas and sliced mushrooms to this dish. I added about one Tablespoon of chicken stock to the egg yolks before adding them to the pasta. This helped to incorporate them without cooking them too quickly. Very tasty dish!

Pumpkin Pie Martini

I used skim milk to make this drink since the recipe doesn't specify. I think whole milk would make it better and make the drink creamier. I don't think of a martini being a sweet drink, but pumpkin pie certainly is. The drink itself isn't sweet, but the honey and graham crackers add that sweetness. I wasn't crazy about the first sip, but found that I liked this well enough as long as I had a little of the honey and graham cracker with each sip. I finished it quickly - maybe too quickly. ;)

Banana Bran Zucchini Bread

This is tasty and moist. It does have a different texture (from the bran). The pumpkin flavor isn't really noticable, but the banana really comes through. This is more of a cake than a bread since it isn't baked in a loaf pan. Min required less baking time than stated - about 45 minutes.

Banana Apple Bread

I was really between three and four stars with this recipe. The finished bread is delicious, but there are a number of flaws with the recipe. The baker is instructed to combine the wet ingredients in one bowl and the dry ingredients in another bowl, but is never told to mix the two together. The loaf pans called for (7x3 inches) are too small. I used 8x4 inch pans and they nearly overflowed. The baking time, as others have noted, is off and the temperature is too low. Like others, I increased both time and temperature. The foil simply stuck to the top of the loaves and tried to take the banana slices with it when removed. Even after baking for what seemed like an eternity AND passing the toothpick test, the bread was gooey on the bottom after cooling and cutting. But it tasted great.

Pumpkin Delight

I had high hopes for this recipe, but it didn't pan out for me. It seems several other reviewers made the mistake of omitting the whipped topping from this recipe and using it for a garnish. I think they were on to something. I followed the recipe. I have a LOT of experience in the kitchen, but followed this recipe any way so I could accurately review it. There is definitely too much filling for a standard graham cracker pie crust. (This might work well in the new larger ones I bought after making this. Too late. But the recipe just states "graham cracker crust".) This does lack some flavor. The amound of whipped topping dilutes the pumpkin and spice flavors. My pie was allowed to chill for about 5 hours before cutting, but was still too soft. I think this would work better if the milk and topping were both cut by 1/2 cup and pumpkin spice pudding replaced the vanilla. THEN you'd have a pie that has pumpkin flavor and doesn't fall apart when cut. But then it wouldn't be the same recipe at all.

Chunky Pumpkin Chili

I'll admit, I was pretty skeptical of this recipe. Like so many people, I associate pumpkin with sweet desserts. Though in the back of my mind, I am fully aware that it is used in many savory recipes, I've never really gone there - until now. This was delicious. The pumpkin flavor is not overwhelming, but it's there, in the background, along with the pumpkin pie spice. The only change I made was out of necessity - I didn't have quite enough tomato juice, so I used a little tomato sauce and water to round it out. I'll definitely be making this one again!

Rosemary-Butter Sauce

I had high hopes for this, but it was just okay. I followed the recipe, but the sauce never thickened up. It simmered for a good 30 minutes, but was still pretty thin. The sauce tasted mainly of wine. The rosemary flavor just wasn't there.

Fresh Oregano and Blackberry Green Beans

These were simple enough to make. This is an interesting combination of flavors. I used wild blackberries. I really ended up eating around the berries which weren't all that sweet. The beans were very tasty, though.

Zucchini and Cheese

We loved this! I had an abundance of zucchini and peppers from my garden, but no tomatoes. I used a 15 oz cn aof petite diced tomatoes which I drained. I have fresh herbs growing right outside my kitchen, so I used parsley, thyme, and oregano in place of Italian seasoning. This took about 45 minutes to be done (cheese bubbly and slightly browned.) My husband loved this and had three helpings. This will definitely be made again!

Chocolate Zucchini Bars

No, this is definitely not a cookie, or even a bar. It's a cake. It's a very good cake, but it IS a cake. I didn't frost this, but served it with whipped cream. We enjoyed this for dessert and breakfast!
