Granny's Filled Cookies

Reviewed: Dec. 16, 2010
I wish there was a way to get more filling into these cookies. It's such a small amount of jam, that when the cookies puff during baking, there isn't much filling in comparison. I refrigerated the dough overnight, but needed to let it warm up for quite a while before I could work with it. Like others, I rolled the dough out and cut it with a 3" round cutter. I made some cookies with apricot jam and some with homemade cherry-raspberry jam. I used a little water to help the dough stick to itself and pressed it with the tines of a fork to help seal in the jam. Some still leaked out, but it did help. This is a very tender, flaky cookie. They are best eaten the first day or two. I haven't had the opportunity to try freezing them. I would like to try using a chunkier fruit filling in the future. Tip: If rolling out the dough for cutting, roll between two sheets of waxed paper lightly dusted with flour. This makes the job much simpler!

Chocolate Pecan Sandies

Reviewed: Dec. 8, 2010
I followed this recipe to the letter. These were good, but almost too crumbly. They fall apart as soon as they're bitten, but at least they taste good as they crumble.

Lemon Crinkles

Reviewed: Dec. 7, 2010
These are wonderful! They have that perfect crisp and chewy texture I love in a cookie. I used butter flavored shortening and added some yellow sugar to the tops. Thanks for sharing this delicious recipe. I agree - it needs to be published!

Hearty Turkey Soup with Parsley Dumplings

Reviewed: Dec. 6, 2010
I had homemade turkey stock made from my Thanksgiving turkey, so I used that and started at step 2. This is a very hearty and satisfying soup. I loved the parsley dumplings - they added an old-fashioned touch and were the perfect complement to the soup. Delicious!

The Absolute Best Potato Soup

Reviewed: Dec. 6, 2010
We really enjoyed this soup. I had leftover ham steaks and used that instead of deli ham. I also used homemade gravy mix (Sweettreats' recipe) but otherwise followed the recipe. I served this with homemade French bread for a delicious comfort food meal.

Chicken Linguine a la Me

Reviewed: Dec. 6, 2010
Okay - one MAJOR difference between my picture and the recipe - I realized after chopping the other vegetables that my broccoli was no longer edible. I used thawed frozen peas instead. I used two large chicken breasts, which were more than enough. Very tasty recipe - comfort food - perfect for this cold, snowy evening.

Turkey Tetrazzini II

Reviewed: Nov. 30, 2010
We loved this. I added peas for color, but otherwise followed the recipe exactly as written. This was a great way to use up some of my leftover turkey without it seeming like "leftovers for dinner." I will definitely make this again!

Rice Casserole with Cheese and Almonds

Reviewed: Nov. 29, 2010
Why didn't I read the reviews before I made this recipe? I halved the recipe as I only wanted two servings and maybe some leftovers. As soon as I cooked the rice I realized I was in trouble. I doubled the amount of soup the recipe called for. I wish I'd mixed in some milk to add moisture, as the result was still somewhat dry. The resulting rice mixture completely filled a 2 1/2 quart baking dish. Seems to me that somehow the recipe is off a bit, as I was only making half a recipe and the FULL recipe is supposed to fill a smaller dish. While this was a bit bland, there is hope for this recipe. IF I make it again, I will cook much less rice in chicken broth instead of water. I would also add some salt, pepper, and probably a little garlic.

Pumpkin Pie Spice I

Perfect blend of spices. I can't believe I never reviewed this before. I just ran out and have to make some more. I won't buy the commercial brands when this is so simple to make!

Chocolate Crunch Pie

Reviewed: Nov. 28, 2010
Holy cow, that's a lot of chocolate! I used 1 cup of mini chocolate chips and had a good bit of cookie left over after completely covering the top of the pie. I froze it for about two hours before serving. This is a chocolholic's dream. If you like a very sweet, VERY chocolatey dessert, this is the one for you!

Pam's Homemade Egg Noodles

Reviewed: Nov. 28, 2010
I made several changes to the original recipe to get what my family and I consider a 5 star recipe. Thickening the sauce is optional, but delicious! Just remember that these will take a LONG time to cook. Be patient and you will be rewarded. Enjoy!

Homemade Egg Noodles

Reviewed: Nov. 28, 2010
There is definitely something missing in this recipe - liquid. Four egg yolks is not enough to bring together 2 cups of flour (unless they're ostrich eggs). I had to add back two whites and a splash of milk for my dough to be workable. Another key here is letting the dough rest. I'd suggest wrapping it in plastic wrap and walking away for a good 15 minutes. I rolled out 3/4 of my dough and was called away before the 4th. When I returned to roll it out, it was much easier and I was able to roll it much thinner. I dried my noodles on cookie racks near the oven for about an hour. The recipe doesn't mention it, but homemade noodles take MUCH longer to cook than store bought. I boiled these in chicken broth for about half an hour or more before they were tender. Then I thickened the broth with a flour/water slurry for serving (important to let this boil for several minutes.) The result was well worth the effort. I will definitely make this again WITH my changes.

Very tasty chowder and so easy to put together! The bacon adds a wonderful smoky flavor that pairs well with the salmon. Perfect on a cold fall evening.

Turkey-Cheese Macaroni Bake

Reviewed: Nov. 26, 2010
This is a tasty recipe - basically macaroni and cheese with turkey thrown in. It could use a little garlic added in with the onions for a little more flavor. If I make this again I will also add some extra cheese.

Kickin' Portobello Dressing

Reviewed: Nov. 26, 2010
I really enjoyed this dressing. It's a bit nontraditional for us, but I loved the sweetness of the dried fruit with the herbs, mushrooms, and chicken stock. I baked my dressing outside the bird. Thanks for a tasty recipe!

Shrimp Stuffed Mushrooms

Reviewed: Nov. 26, 2010
We loved these. I made them as an appy for our Thanksgiving dinner. I did have to make a substitution out of necessity - I couldn't find bacon flavored crackers anywhere. I used herb crackers (Sociables) and added some diced bacon to get the bacon flavor. I made these the night before and refrigerated, then added the cheddar cheese right before putting them in the oven. They did take longer to bake, but I believe this is due to being refrigerated. Thanks for a keeper recipe!

Apple-Cranberry Crostada

This is a simple, rustic dessert. It is delicious, as is. I may add some cinnamon the next time. I used demerara sugar to top the crostada. Very tasty with a scoop of vanilla ice cream!

Maple Pork Slices

Reviewed: Nov. 14, 2010
This was very quick, simple, and delicious! I used garlic powder instead of minced garlic and sprinkled the spices onto the pork instead of shaking it. My maple syrup was the regular kind. I've honestly never seen sugar free maple syrup. We really enjoyed this and I will definitely make it again!
