Acorn Squash Soup

Amazing. I used olive oil instead of butter. I'm sure butter is awesome, because it always is, but the flavor is not missed. Dill and curry = winner!

Sweet Potato Gnocchi

I cut this in half and had so many I think it could serve 3-4! Delicious. Popped them directly into saute pan from boiling water, got some texture with butter (sub - Brummel), pine nuts and sage. So fast, would make a great on the spot appetizer for guests, too.

Hot Bacon Dressing

This is WAY too sweet. Lost the taste of bacon and any tangy notes. I would cut sugar to 1/4 cup next time and use apple cider vinegar.

Perfect Sushi Rice

Easy, good results, tasty. I used Agave syrup instead of sugar, just a little less than I would the sugar. It was lightly sweet, just tangy enough from the vinegar. I didn't need all 15 servings so first time I cut the recipe to 5, but I think that was too far. Better results with 10 servings this time. Quantities and time were in better harmony. One important tip (via unnecessary trial and error) is to NOT be nervous the rice will stick to the bottom when it gets into the last 5-10 minutes. Keep it on low, keep it covered and wait until the end. The rice dried out enough, steam helped, fluffed (for sushi rice) and was not gummy. And I didn't end up with a ruined pan bottom. First time I added more water and kept cooking it b/c I hadn't kept the lid on and turned it low enough, so the water kept disappearing. Second time's a charm!

Peppy's Pita Bread

Not very flavorful, but guess what? Pita isn't. Incredibly easy to make - I whip them up quickly to use for kid's lunch. We do semi-homemade "lunchables" instead of buying that they call pizza. Much better to give my son real food!

Grill Dough

Finally, I can make bread! For pizza, grilling for a few minutes each side before adding toppings helps the dough cook through without burning. Excellent! Good texture, too. I'm going to try a sweeter version for a breakfast bread next time.

Apple Crisp II

Even I was able to make a successful crisp, and my family and I love it. I also doubled the topping (used another 1/4cup applesauce instead of butter) and cut the white sugar in half (still a little sweet for me). I think I'll try more cinammon next time. Delicious either way.

Melt - In - Your - Mouth Shortbread

I give it 5 stars though I didn't try it strictly as written - I wanted more stuff in there so I added mini chocolate chips, a pinch of salt, and vanilla. Turned out fabulously! I will be making a second batch so I can share with friends and family.

These turned out nicely. I like the taste, the size, and the texture. I think I even messed up a little on the rise, so I can't wait to make them again! These are now our daily sandwich breads (I vowed to not buy store bread again)

Homemade Fresh Cheese

This worked out great, though I didn't realize how long it would take for the milk to heat. I will read through reviews to see if a higher, faster heat would have been more efficient? With a medium heat it still scorched a little on the bottom, but nothing I couldn't remove (I stirred a LOT). I did not need cheese cloth, using a fine mesh strainer instead. I added pink salt after the cheese had drained, before forming it.

Chocolate Banana Bread

I'm a dummy and this is me-proof! I had to switch the margarine for equal amount veg oil. I didn't add the chocolate chips because (a) didn't have any, and (b) didn't want it too sweet, anyway. The result was outstanding and I plan to make this every single time our bananas go too long. Which is often.
