Chocolate Surprise Cupcakes

I made this from a cookbook I have and was very glad to see it here. I made a mistake when putting the ingredients together and put the dry chocolate in the cream cheese and bits, so I added everything else and stirred. Then I sprayed with Pam and filled a mug 1/2 full of the mixture and baked for 1 minute. Repeating this until the mixture was gone. You need to clean the mug after every use as moisture collects in the bottom, so wipe or wash and spray just a quick spray of Pam, it came out like a lava cake. The cream cheese when to the bottom and was a great dessert with my life saver dinner last night when the oven went out. I did use cider vinegar as I had no white vinegar and I used 3 banty eggs.

Applesauce Barbeque Sauce

This recipe saved my dinner tonight. I made the sauce yesterday and thought I would follow one reviewers instructions and bake at 175 for 2 hours and spread sauce over meat every 15 minutes. Well my oven died about 4 hours before I was going to start the meat and so I had already put in into a crock pot because I heard the Lord say to. Well, was I ever glad. After a couple of hours I took the meat and drained it and dipped it into the sauce and laid each piece back into the crock pot and turned it back on. I was really sweating not knowing how I was going to make the ribs taste good and not be sauceless. They came out perfect. I'll admit I did tweak the recipe a little. I make my own applesauce with sugar and cinnamon so I left out the cinnamon and 1/2 the sugar. I mada a second batch for dipping and didn't need it. THANK YOU for this recipe...

Coleslaw

I grabbed this recipe to make coleslaw for my husband never giving a thought to not having mayonnaise in it. When I put it on the table I thought he won't eat it. Well he did and enjoyed it. I will make it again.

Ham and White Bean Soup

I just made this today. Only I did change some things because I am always using the things I have on hand that I can from my products. I used pork broth (2 pints) and pepper ham hocks and 1 pint of home made salsa, and dried beans. I also added 2 tbsp. cornstarch mixed with a little cold water to thicken it. When DH likes it it has stood the ultimate test. Excellent with homemade biscuits (just because I didn't make cornbread.

The Best Chicken Fried Steak

I have to tell you, I made this when a friend butchered one of our older cows. We got a lot of cubed steak (which now I am happy about) and I had to figure something to do with it. I really enjoy a good CFS. I made this several times and every time my husband said how good it is. He made the comment that I have probably ruined him for any other. We used to order it quite often in restaurants. thank you for a GREAT RECIPE.

Baked or Fried Jalapeno Poppers

I made these tonight and loved them except for one little thing. Next time I will cook them less time as the cheese was cooked out of them. I cooked these again for the second time and some I baked and some I fried. I liked the baked best even though they were a little tough.

Best Ever Jalapeno Poppers

I made this exact recipe and my hubby loved it, except I made them with homemade cheese. Then I started doing some adaptations and finally this is how I make them. I use the same recipe, however I only cook them until the cheese is melted. No longer. They are the BEST, hot or cold.

Spicy Beanless Chili

I give this recipe a 100%. I was looking for a recipe I could can with everyone liking it and this one did the job. Both men liked it and one likes spicy and one doesn't so i t made a HIT. I increased the recipe several times and didn't have any tomato juice but added home canned tomatoes and it was very excellent, now I have my canning chili recipe. THANK YOU

Easy Pesto

I made this with fresh basil from my garden and I had no Almonds so I used finely chopped black walnuts. OH YYYYYUUUUUUMMMMMM. I had enough to use for two different meals. I made the first one a couple of weeks ago. Bruce liked it and said he has to get used to the olive oil and I guess he better because I will make this every summer I have fresh Basil in the garden. Also I had some pork chops left over and boned them, sliced them very thin. Mixed them and the pesto and pasta together and what a delicious quick dish. Yum, yum, thank you for this recipe. I will make it over and over again.

I made this only I added 1/2 pound of spicy sausage and browned it with the mushrooms. I used home canned mushrooms and frozen spinach and l cap lemon juice and 1/3 the amount of cheese on spaghetti noodles. My husband liked it. I would also like to mention I used home made ricotta.

Cajun Spiced Pork Chops

My husband and I loved this recipe. We both really enjoy spicy food and even though sometimes he has trouble with his stomach, he said he had no problem with the spice and the flavor was very good. We don't eat much salt so I used garlic powder instead of salt. I did cook it too long I think as I used thick chops and they got a little too dry. That was my mistake.
