Coconut (Haupia) and Chocolate Pie

I made this for a Christmas potluck at work and it was a huge hit! I used a pre-made graham cracker crust (b/c I'm lazy). I also toasted some coconut to put on top. This was actually easy to make and tasted great!! I will make again!

Cocktail Meatballs

These are great!! I used a 2 lb bag bag of frozen turkey meatballs. I doubled the sauce and made it the day ahead, i also put the bag of frozen meatballs in the fridge to thaw over night. About 2 hours before the event I threw the meatballs and sauce in the crockpot on high for 2 hours. They were devoured!!

Turkey Pot Pie I

This is a great way to use up left over turkey (and for unused pie crusts)!! This was the first pot I made and I was a bit nervous, but dang, this si fantastic!! I'm freezing some turkey so a few weeks from now I can make it again! This was easy enough to make during a crazy busy Monday evening! I did not have oregano (lame, I know) so I just use Italian seasoning. I also threw in some left over corn. Soo good!

Crystal's Chocolate Chip Pumpkin Cookies

These are great!! I needed a recipe that I could use my freshly pued pumpkin and this fit the bill!! I just used cinnamon because I didn't want go through the added steps of making pumpkin spice and they turned out great. I prefer to use the mini chips. Will make again!

S'mores Crumb Bars

Loose Meat on a Bun, Restaurant Style

All my boyfriend had to say was "that was awesome." We don't have anything to compare these to, but they were great!! I halfed the recipe and added season salt. They were served on sub buns with mustard and relish . . . yum!

Coconut Shrimp I

LOVE, LOVE, LOVE this!! I used Killians Irish Red beer, mmm mmm. Was very easy to mix the batter and fry on the stove top. I served it with a red lobster type pina colada sauce: 1/2 c sour cream, 1/4 pina colada cocktail mix, 1/4 crush pinapple, drained, and 2 TB sugar, mixed all together and chilled the night before. All I can say it this was AMAZING and I can't wait to fry 'em up again.

Peach Pie

This was great! I used 10 really fresh peaches and it turned out great. I did not need to add cornstarch as some suggested, I just let it sit in the oven after baking. I did add cinnamon and used 1/2 white, 1/2 brown sugars. After peeling and slicing the peaches, it was an easy pie to make!

Ham and Potatoes Au Gratin

This was very greasy but delicious! I sliced my potatoes and mix them with the onion, ham and cheese sace in a big mixing bowl then poured it into the 2 quart dish. Since I double the recipe I set the temp to 400 and baked for 45 min-hour, it was perfect! The leftovers were okay but not as good as they were just after coming out of the oven!

Banana Banana Bread

This banana bread is awesome! I love how I can actually taste the banana and not a bunch of spices and sugar. I follow the directions exactly (used a little less banana) and it turned out great. It is perfect heat up in the micro for a quick breakfast. I will make again and again!

Black Bottom Cupcakes I

These are great! For me it made 15 regular size cupcakes- they were raised a bit over the paper. I made used dollops of the cream cheese filling and didn't have any left over - - - too good to waste! They were a big hit. They taste amazing an hour after baking, then the next day, and the day after that! Will make again!

Day-After-Thanksgiving Turkey Carcass Soup

Just got done eating a bowl of this. It is alright. I did not have rice so I just threw in the bag of egg noodles I had and skipped the peas. I'm not sure about putting stuffing it in, I had to scoop out so bread clumps. With the right amount of salt and pepper it is decent. The boyfriend loved it!
