HERDEZ® Red Guajillo Chile Chicken Tortilla Soup

This soup was awesome! I like spicy foods. So I used the whole jar of the Herdez cooking sauce. Also, I used a can of diced tomatoes and chilies instead of just diced tomatoes. Since I did not have any V-8, I used a tomato salsa and added water to it. Also, based on the author's footnote, I added some cumin and garlic powder. It was delicious. It would go great with the Herdez Mexican Corn Bread.

CopyCat Starbucks Classic Coffee Cake

Wow! This is an over the top recipe. It is awesome! My husband loved it so much he requested that I make this cake for his birthday. The cake was moist and the topping was outstanding. Both my hubby and I thought it was much better than Starbucks. Thanks for sharing this fantastic recipe.

Savory Garlic Marinated Steaks

This was very good. I marinated it overnight and followed the recipe with the exception of the soy sauce since I was out. I tried hoisin sauce since I had that on hand and it turned out great. I will try this again with the soy sauce.

South Texas Carne Guisada

Yum! This is Tex Mex at its best! If you like fajitas you will LOVE this dish. The flavors are great. I did take the recommended short cut and used canned diced tomatoes and green chilies. It still tasted awesome. Also, I used red, orange, and yellow bell peppers just to make it more colorful. I served it with sour cream, cheese, and pico de gallo. The spices are just right. This will be my go to recipe from now on.

Grilled Sweet Italian Chicken Sausage with Tomato Cream Sauce Over Linguine

This was delicious. It was quick and easy and tasted great. I took a shortcut and used the Al Fresco Precooked Sweet Italian Chicken Sausage and sautéed in a skillet and it was delicious.

Sopapilla Cheesecake Pie

Yum!! We loved this. I scaled it down to 6 servings instead of 12 and used 1/3 less fat cream cheese and reduced fat refrigerated crescent rolls because that is what I had on hand and it was still delicious. Next time I have to bring a dessert to a party or pot luck I will bring this. It is a keeper.

Pico de Gallo Chicken Quesadillas

I love the combination of spicy chicken, gooey cheese, and the flavorful kick of the pico de gallo. I wanted the chicken to have more flavor so I made these using leftover shredded chicken from the Slow Cooker Cilantro Lime Chicken recipe from this site. It added even more flavor and made this recipe so easy to put together. I will be making this recipe again and again.

Kristen's Bacon Ranch Potato Salad

Loved this! How can it not be good with all these great ingredients. I even used reduced fat sour cream, light ranch dressing (instead ranch mix), center cut bacon and 2% reduced fat cheese and it was still awesome. Thanks KristenB for a great recipe.

Chicken Fajita Melts

YUM! So delicious and easy. My husband declared it was one of the best open faced sandwiches he has had. I did not have tomato juice so I used salsa instead. This is a definite keeper. Thanks for a great recipe.

Chicken Mango Salsa Salad with Chipotle Lime Vinaigrette

I am the submitter of this recipe. It is one of my all-time favorite recipes. I created this the day after a fajita dinner with mango salsa. So the salsa was pre made and the bell peppers were already chopped. So it was only a matter of assembly. It is a great way to use leftovers. It tastes great with leftover rotisserie chicken, fajita chicken or blackened chicken. In Texas there is a chain of grocery stores that makes a great mango salsa and also sells a package of pre-chopped three color peppers that can be used as a short-cut. Either from scratch or using short-cuts the salad is delicious.

Sauce Rosee

This sauce is addictive! I need a 12-step program for it. Excuse me as I lick the bowl so I do not miss a drop of this sauce. Did I mention I really like this sauce? I just added this to my family favorites folder. I followed the directions until the tomato sauce. I substituted spaghetti sauce for that, and then substituted a light alfredo sauce for the heavy cream. I served it with tortellini. Excuse me while I go into my Sauce Rosee coma now.

Slow Cooker Pot Roast

When I came home after work my hubby declared this roast was "da bomb!" I made this on a day when I didn't have time to cook or plan. So I needed something super simple to quickly throw in the crockpot. Like others, I was skeptical about all the packaged seasonings. Usually I try to make my own instead of using the prepackaged stuff but I simply did not have time nor motivation to do so on this day. I did not add salt since the packaged seasoning would have plenty. Also, I used a reduced sodium gravy mix and added probably 3/4th cup water but next time will probably stick to 1/2 cup because it made way more gravy than we needed. However, this was delicious and I am so glad I found this recipe.

Southwestern Quinoa Salad

Yum! I just had this for lunch and it was excellent. I followed the recipe except left out the butter to reduce fat and left out the corn because I was out of it and didn't want to run to the store. I have saved this recipe and will be making it again. Thank you Texas7127 for sharing your wonderful recipe.

Spaghetti Pie III

My hubby loved this. I used about 1/2 the amount of spaghetti and used a spicy pasta sauce. I added 1/2 a sweet onion, diced up, (instead of green onion) and sautéed for about 5 minutes in the pan after I browned the ground beef. Then I added a heaping teaspoon of minced garlic instead of the garlic powder. I also poured a little red wine in with the pasta sauce. I used 1/3 less fat cream cheese and I used all parmesan cheese and left out the cheddar. Instead of layering it, I mixed everything together and it was delicious. We will be making this again.
