Spicy Red Snapper

After trying Red Snapper Veracruz at a local mexican restaurant, I wanted to recreate the sauce. This recipe was the closet as it had the basic recipe. With some tweaks I was successful in closely matching the flavor of the Mexican restaurant Veracruz sauce. I used a can of diced tomatoes and chilies instead of stewed tomatoes and left out the red pepper flakes and added an extra tablespoon of capers and a 1/4 teaspoon of mexican oregano. It was delicoius. I will make again.

Italian Beef in a Bucket

This is heaven! I cooked it only 8 hours and it was still wonderful. I'm sure it would absolutely fall apart if cooked for 18 hours. I followed the recipe except I added more italian seasoning, and used fat free, reduced sodium beef broth. This was the first time I cooked Italian Beef and it certainly will not be the last. This is a keeper.

Chicken Breasts Pierre

This easy to fix chicken dish was very good. The flavors blended nicely and it would go well with vegetables and pasta or potatoes. I followed the recipe with two exceptions, I browned the chicken in a small amount of olive oil instead of butter; and secondly, based on other reviews, reduced the chili powder from two teaspoons to one. This will be a recipe that we make again.

Pork Chops Italiano

These pork chops were tender and juicy and had a lot of flavor. We loved them! I followed the recipe except for the mushrooms (didn't have any) and I left out the salt (personal preference). This is a terrific quick and easy weeknight dinner that everyone will love.

Onion & Garlic Biscuit Flat Bread

Delicious! We loved this too much! It was difficult to eat just one. I served it with my Spicy Corn Chowder and it was the best comfort food. I did adjust the recipe slightly to use I had on hand. I used low fat mayonaise and substituted slices of french bread for the biscuit but it was still delicious. I'm sure it would be awesome made with the biscuits. AllRecipes definitely needs to publish this one given all the rave reviews. UPDATE: I made this again with biscuits using the Grands Jr. but I was out of fresh parmesan. So I made half with grated parmesan (the kind in the green can) and half with sharp cheddar. While I love cheddar I think in this case the parmesan goes better with this particular flavor combination. I will be making it again.

Renee's Pecan Crunch Cookies

These are wonderful! If you love pecans and pralines, you will love these crunchy cookies. They do taste like praline cookies. They are sweet enough but not sweet like pralines. They were very easy to make with ingredients already in my pantry. No trip to the store necessary. I don't bake very often, but these are worth baking. I made the recipe as written except I used margarine instead of butter since that is what I had on hand. I used a tablespoon to drop the dough on the cookie sheet, but these made much larger cookies than what I expected. I set out to make 24 and it made about 18. But they were delicious! These would be awesome if they were dipped in chocolate! Thanks for a great cookie recipe.

Spicy Baked BBQ Meatballs

My husband and I love these spicy barbecue meatballs. It is one of our favorite dishes. The onion, garlic, coarse grain mustard and barbecue sauce combine nicely to give it lots of flavor and it has just enough crushed red pepper to give it that extra kick to make it special. I hope your family loves it as much as mine. Update: I made this with ground turkey and it worked great. I also doubled the "sauce" (dijon, honey, BBQ sauce, and worcestershire) and put 1/2 in the meat mixture and then used the rest to baste the meatballs and the remainder to use as a dipping sauce. It also works great in sliders with extra sauce and pepper jack cheese

Spicy Corn Chowder Lightened Up

This is the perfect comfort food. It was so good that not only did I have it for dinner, I also ate it for breakfast and lunch the next day! It tasted even better the next day as the spices had blended together and it was spicier than the first day.

Low Sodium Cajun/Creole/All Purpose Seasoning

Scotdog, you have a great seasoning recipe. I loved it....and I love that is has no salt. I followed the recipe as specified except I used celery seed instead of celery salt. I used the recipe with the California Chicken Spaghetti recipe and it made the chicken delicious! Thanks for a great cajun seasoning recipe.

Slow-Cooker Pepper Steak

I tried this based on recommendations on the buzz. It was very good and easy to prepare. I used precut stir-fry beef strips and used 1 green bell pepper and 1 red bell pepper. In addition I used no sodium beef bouillon and reduced sodium soy sauce and left out the salt. Since it had no other asian flavors other than the soy sauce I added 1 tsp minced garlic and 1 tsp ground ginger. Next time I will add more. It was very good but did not wow me. Next time I will add more garlic, ginger, and add a little crushed red pepper.

Amazing 'Pizza' Pork Chops

Yum! It does remind me of pizza. The pork chops came out juicy and flavorful. I followed the recipe as written except I baked them in the oven instead of on the grill. I used fresh mozzarella and fresh basil and oregano. We will be making this again. Next time to match our pizza preferences I might top it with some sliced red onion and crushed red pepper.

Chicken Breasts in Caper Cream Sauce

My husband loved this so much he was eating the sauce with a spoon before I could get this on a plate and on the table. Then he ate all of his serving and half of mine! Next time I would double the sauce as others mentioned. I followed several reviewers suggestions and added a splash of white wine to deglaze the pan, black pepper and a little lemon juice instead of lemon pepper. I added minced garlic to the sauce. Since it was such a hit with my husband I will make it again. For me it was good but did not wow me.

Oven Roasted Parmesan Potatoes

bellepepper, you have an easy recipe that is simply delicious and fits into a healthy eating plan as well. So I thank you for that. I used russet potatoes since that is what I had on hand and cooking spray instead of oil. They turned out just like your picture and like you described, crispy on the outside and tender in the middle. The potatoes went really well with Marianne's Pork Medallions with Balsamic Vinegar and Capers recipe as well as the Spiced Marinated Tomatoes recipe from Cooking Light's June 2006 magazine. This will probably be my go to recipe for roasted potatoes in the future.

Pork Medallions with Balsamic Vinegar and Capers

Marianne, this is OUTSTANDING! I would give it more stars if possible. The sauce was amazing. I had never cooked with capers before, but they blended in with the sauce so nicely. I will be using them more often now. My husband came in the kitchen while I was preparing it and asked what I was cooking that smells so good! To top it off, this dish is so quick and easy to fix it would be good on a weeknight. This one is a winner. We will definitely be making it again in the future.

Turkey Taco Nachos

I love Tex Mex and nachos. However, when I needed to eat healthier I didn't want to give up my Tex Mex so I created this recipe. I love it. I can eat healthy and still love my food and not feel guilty.

Bacon Feta Pico Pasta Toss

Slow Cooker Chicken Marrakesh

Excellent! A delicious, easy, healthy, and budget friendly one-dish meal. I made it as written. The flavors blended nicely and it smelled wonderful while it was cooking. I cooked it on high for just under 4 hours and stirred it initially and then stirred one about half way through to blend everything and distribute liquid and had no problem with the chicken breasts drying out. UPDATE: I made this again and added red and green bell peppers and broccoli slaw to increase the vegetables and I doubled the spices except salt. Since I increased the vegetables I decided to add another can of diced tomatoes and that was a mistake because then it added too much liquid. I recommend not adding additional liquid even though it may look dry in the beginning because it makes its own sauce as it cooks. Also, this time it seemed the additional liquid diluted the spices as it was not as flavorful as the first time even though I doubled the spices this time. Next time I will add the additional vegetables but stick to 1 can of tomatoes and double the spices. It is a delicious recipe. If trying it for the first time I recommend following the recipe as written. UPDATE II: While eating leftovers of this recipe my husband declared this was the best dish I have made. So it is a winner.

Dry Buttermilk Ranch Mix

Excellent. I have tried several ranch seasoning mix recipes and I like this one the best. It has more depth and tastes more like ranch dressing should. I used this recipe in the Monterey Ranch Chicken Bake recipe and it really added a lot of flavor. Thanks Scotdog for a great recipe.
