Summer Anytime Crisp Corn Salad

This salad is very good. I enjoyed it. I thought the dressing went well with this. I did add jalapeños instead of green bell peppers to give it a little more kick. Thanks for sharing this recipe.

Honey-Soy Pork Chops from the Bradshaw Family

These were good and I did not even marinade them since I did not have time. I just sprinkled some crushed red pepper into the marinade and basted the boneless chops while they cooked. Next time I will marinade them. Definitely with trying.

Healthier Beth's Spicy Oatmeal Raisin Cookies

These were not bad but they didn't taste like the regular oatmeal cookie either. I could tell that it had less sugar. I often use reduced fat ingredients in many recipes but when it comes to cookies, I prefer to use the standard recipe. I will probably stick with the original recipe instead of making this one.

Green Bean Blue Cheese Salad

I made this for our Memorial Day get together and it was a hit. I sauteed a sliced Vidalia Onion insteead of the red onion so it would not have too strong a raw onion taste. Also, I used white balsamic vinegar so it would not change the color of the green beans, added sliced cherry tomatoes, and served the blue cheese on the side since some in our group don't like it. I will definitely make this again.

"Pantry Raid" Chicken Enchilada Casserole

This was awesome. I would give it 10 stars if I could. For me this is pure comfort food; and it is so easy. I cheated and used shredded rotisserie chicken, light cream cheese and substituted my customized Grandmother's Buttermilk Cornbread recipe with corn and jalapeños from this site instead of the cornbread mix. So it was a super fast dinner. Thanks for sharing a great recipe.

Kerry's Asiago Cheese Hamburger

This is a big messy yummy burger. After reading reviews I adjusted the amounts of some of the seasonings and it worked great: I used 1 lb ground beef for 3 burgers, and used 1 tsp Worcestershire, 3 TBL Frank's buffalo wing sauce, 1/2 tsp black pepper, 1/2 tsp seasoned salt, and 1/2 teaspoon garlic powder. Since I had reduced the liquid in the burger, I did not refrigerate them and it worked great and still had lots of flavor. I brushed on the barbecue sauce while grilling and added no other barbecue sauce or ketchup. I served on onion rolls with lettuce, tomato, onions and asiago cheese. I left off the bacon and didn't miss it. I really enjoyed this burger. I will make again.

Glazed Grilled Pork Chops

This grilled pork chop received mixed reviews in our house with one person rating it a 2, one a 3, and I rated it a 4. So I took the average of 3. Next time I think I will marinate it first because that would help it give more flavor and make it more tender. The sauce is like a slightly spicy thousand island dressing I liked but others didn't. We generally like spicy and thought this could have used more flavor. I will probably try it again, marinating it next time and maybe tweaking the sauce.

Chicken Fajita Melts

YUM! So delicious and easy. My husband declared it was one of the best open faced sandwiches he has had. I did not have tomato juice so I used salsa instead. This is a definite keeper. Thanks for a great recipe.

Traditional Mexican Guacamole

YUM! I love fresh guacamole and this recipe is right on. I didn't change a thing. I used two roma tomatoes to get roughly 1 cup chopped tomatoes and about 1/4 of a sweet vidalia onion to get 1/4 cup chopped onion. I used one chopped, seeded jalapeño which gave it a mild spiciness in my opinion. Next time I might add one more jalapeño as I like a medium spice level. Thanks Kaersten for a great recipe.

Kristen's Bacon Ranch Potato Salad

Loved this! How can it not be good with all these great ingredients. I even used reduced fat sour cream, light ranch dressing (instead ranch mix), center cut bacon and 2% reduced fat cheese and it was still awesome. Thanks KristenB for a great recipe.

Chicken Nachos

Yum! We really enjoyed these and they were so easy. Like other reviewers I added taco seasoning to the chicken before cooking. I used the Taco Seasoning I recipe from this site. I used sliced Jalapeños instead of green chills since that is what I had on hand. We will be making these again.

Slow Cooker Cilantro Lime Chicken

How can you not love this super easy, super tasty recipe. I used the Taco Seasoning I recipe from this site instead of packaged taco seasoning and left out the salt and I left out the cilantro because I used this chicken in the Pico De Gallo Chicken Quesadilla recipe which already has cilantro in the Pico De Gallo. It was excellent. I used about half the chicken but kept the seasonings the same. I will definitely be making this again.

Pico de Gallo Chicken Quesadillas

I love the combination of spicy chicken, gooey cheese, and the flavorful kick of the pico de gallo. I wanted the chicken to have more flavor so I made these using leftover shredded chicken from the Slow Cooker Cilantro Lime Chicken recipe from this site. It added even more flavor and made this recipe so easy to put together. I will be making this recipe again and again.

Sopapilla Cheesecake Pie

Yum!! We loved this. I scaled it down to 6 servings instead of 12 and used 1/3 less fat cream cheese and reduced fat refrigerated crescent rolls because that is what I had on hand and it was still delicious. Next time I have to bring a dessert to a party or pot luck I will bring this. It is a keeper.

This was delicious. It was quick and easy and tasted great. I took a shortcut and used the Al Fresco Precooked Sweet Italian Chicken Sausage and sautéed in a skillet and it was delicious.

Grilled Mediterranean Greek Pizza with Sundried Tomato Chicken Sausage

I enjoyed this pizza. It was very easy. I used a package of Al Fresco pre-cooked Sweet Italian Chicken Sausage and it was so easy and delicious. I used a package of shredded cheddar and mozzarella since that is what I had on hand. I will make this again.

Sweet Italian Chicken Sausage and Tortellini Soup

This was an extremely easy and flavorful dish. I used the Al Fresco cooked Sweet Italian Chicken Sausage in this recipe and it had a great flavor. I used canned tomatoes and chilies instead of fresh tomatoes since I had that on hand. It was a very quick easy and flavorful dish. Next time I will probably add a little italian seasoning as I like bold flavors and spices.

Penne Pasta Salad

This is a good and easy pasta salad that would be great for a pot luck. I used light mayonnaise instead of Miracle Whip as that is what I had on hand. I used red, yellow, and orange bell peppers as I already had them on hand and they add some additional color. The only thing was that the raw red onion was pretty strong. While it added great color, next time I might use red bell peppers and add green onions instead of red, but that is just my preference. Overall, a very good recipe. Thanks for sharing.

South Texas Carne Guisada

Yum! This is Tex Mex at its best! If you like fajitas you will LOVE this dish. The flavors are great. I did take the recommended short cut and used canned diced tomatoes and green chilies. It still tasted awesome. Also, I used red, orange, and yellow bell peppers just to make it more colorful. I served it with sour cream, cheese, and pico de gallo. The spices are just right. This will be my go to recipe from now on.
