Delectable Marinated Chicken

Yum! The title is accurate. I marinated this for about 12 hours using all low-sodium ingredients. I left out the sesame seeds and liquid smoke. I grilled it on a grill pan on top of the stove and it turned out great. Next time I think I will double the marinade and use half of it to baste the chicken while on the grill to give it a glaze. We will be making this again.

Magical Chocolate Cake

YUM!! I made this for my MIL's birthday and it was a hit. This chocolate cake was moist, rich, and full of deep chocolatey goodness. I followed the recipe except I used low fat buttermilk, only about 3/4 cup coffee and mixed the wet ingredients separately from the dry ingredients before adding them to the dry ingredients. Also, at the end I added probably a cup of semi sweet chocolate chips and frosted it with chocolate buttercream frosting. I baked it in a 9x13 pan for about 35 minutes and it came out perfectly. This will be my go to recipe for chocolate cake.

Enchilada Casserole with Red Guijillo Chile Sauce

The Herdez Red Guijillo Mexican Cooking Sauce really takes this recipe over the top. We loved it. I asked my husband to rate this recipe from 1 to 5 and he gave it a 6. He said it was one of the best dishes I ever made. Thank you Herdez!

Lisa's Jerk Chicken

This was good. I made it with boneless, skinless chicken breasts, marinated it overnight and grilled it on a grill pan on top of the stove, I left out the peppers. It had a good flavor but I think it would taste better with bone-in chicken with skin on the grill. I might try that next time.

Lemon Chicken and Veggie Pasta

I'm so glad I tried this recipe. I tasted great and it is pretty healthy with all the vegetables. It takes a little work but it is worth it. I like that it is a whole meal. You can add a green salad if you want, but it is really not necessary with all the vegetables in this dish. I made the dish as written with the exception of substituting green beans for asparagus and shell pasta for no yolk egg noodles because those are what I had on hand. I will definitely make it again.

Oatmeal Pancakes II

This is an excellent recipe. I'm wondering why I have not tried it before now. It will be in our regular rotation from now on. I followed the recipe with only a few minor exceptions since I read several of the reviews that said it was either too salty or had too much baking soda. So I used only 1/4 teaspoon each of salt and of baking soda and the pancakes were perfect. One other tweak I made was to use 1/4 cup whole wheat flour and 1/4 cup all purpose flour. These were a winner. Thanks for a great recipe.

Boiled Water

I was so confused about how long to cook it and for what the bubbles should look like. So I watched and waited and watched and waited looking for those bubbles but nothing was happening. Then the phone rang and I had to leave to go answer it. Of course, I had to chat with my friend from Seattle. Then the smoke detector went off and smoke filled the room. After I crawled on the floor back to the kitchen, I turned off the stove. The bottom of the pan was black and burnt and no water to be found. It disappeared! This is a terrible recipe because it ruined a pot and wasted the water all because it did not say how long to leave it on the stove. You know that is not very environmentally friendly to waste all that water. And I will, of course, be sending you a bill for the cost of replacement of the pot. I won't be making this again. ;-)

Chicken Quinoa

I found this recipe because 1) I had all the ingredients on hand; and 2) it appeared to be pretty healthy and 3) quick and easy to make, and 4) it was a one dish meal. So this recipe has a lot going for it. It tasted good but we like lots of flavor and this was a little on the bland side for our taste. I cooked the Spicy Garlic Lime Chicken Recipe (from this site) in a skillet and then sautéed the vegetables and quinoa in the same skillet to add some flavor. When I make it again, (and I will make it again) I will probably use blackened chicken to add more flavor.

Slim Soup

This is a great, tasty, healthy recipe. I used low sodium chicken broth instead of the chicken bouillon and water. Instead of canned stewed tomatoes I used canned (no salt added) italian style diced tomatoes. In addition to the onion, celery, and bell pepper, I threw in some carrots and shredded rotisserie chicken. It was delicious. It tastes even better the next day. Thanks for a great recipe

Grilled Tarragon Mustard Chicken

This was pretty good. Like others I marinated it for about 5 hours before grilling on a grill pan on top of the stove. I was afraid that the dijon might overwhelm the sauce so I added a little chicken broth to try to balance it out. It turned out pretty good. I sprinkled some cracked black pepper on it while on the grill. I will make it again.

Oven Barbecued Chicken

As written it was three stars. I made the sauce as written first, except using only a 1/2 teaspoon salt, so I could taste it and for us it tasted very bland. 1 tablespoon of salt would have made it waaay too salty. We like dishes with lots of flavor and I knew for this group I would have to spice it up more. So I increased the mustard, added some chili powder, worcestershire, and cider vinegar. These tweaks probably brought it to four stars. It would still require more tweaking. I'm not sure I try this one again.

Bacon Gouda Patties

Yum. This is a big sloppy, messy burger and it was delicious. I made it into single patties and used the gouda mixture as a topping and left it open faced. Then cut it in half for one serving. I used half Johnsonville italian sausage with half the ground beef and that really took it over the top.

Applesauce Pumpkin Bread

This was very easy and very good. I followed the recipe, except that I did not have mace but instead used 1/4 teaspoon nutmeg and 1/4 teaspoon allspice. I added the optional chocolate chips but next time I would probably leave those out, just my personal preference. By all means give this recipe a try. The measurements and cooking time were spot on. Thanks Virginia Ann for sharing your recipe.

Best Hummus

This is a very good base hummus recipe. It has a good texture and some flavor. Because I like lots of flavor, I would probably add additional garlic and maybe some cayenne, but that is just personal preference. You can't go wrong with this recipe and then you can tweak it with additional seasoning from there.

Black Bean and Feta Cheese Ugly Dip

This tasted great. However, I thought this made too much dressing for the amount of the other ingredients. You could probably cut the amount of the dressing in half. Since I only had regular corn instead of Mexican corn, I added chopped red bell pepper and jalapeños to imitate the Mexican corn. The only thing is it is a very pretty dish. So I think the name does not apply. Proudly serve this dish for any occasion.

Chicken with a Creamy Marsala Sauce

This recipe had a nice mild flavor and the sauce was good over the chicken and the rice that I served with it. I followed the recipe, except used half and half instead of the heavy whipping cream. Next time (and there will be a next time) I will probably add some seasoned salt, extra pepper, and minced garlic. Thanks Stephanie for a really good recipe.

Cheddar Bacon Ranch Pulls

This was very good and easier to make than the instructions made it sound. I made it as written. However, I think I cut the bread too deep. I think it would have looked nicer and been easier to pull apart had I kept made the slices a little more shallow. Nevertheless, it smelled great while cooking and tasted great. I will make this again.
