Alyson's Broccoli Salad

Reviewed: Sep. 27, 2008
Loved this recipe!!! I went to a work luncheon and this was served there. When I got home I found this recipe, made it the next day and it was exactly the same! Great flavor and stores well (keep the bacon and seeds out until before serving). My only suggestion is using "thick cut" bacon, it added a little more of a crunch. Great salad for parties, I've made it atleast 4 times since!

Blueberry Buckle

Reviewed: Jul. 20, 2008
This JUST came out of the oven and I can't begin to explain how good this is! I followed everyones sugestion by going with 1 1/2c flour (I used whole wheat pastry flour) but also used xylitol instead of sugar.. Incredible flavor, so light and cake like!

Fantastic Focaccia Bread

Reviewed: Apr. 26, 2008
Im with a few other posters about this being more of a flat bread than focaccia, but it could be because I used whole wheat pastry flour (which you're suppose to be able to sub cup for cup against white flour). It didn't rise, just kind of stayed in a solid ball (like cookie dough). I did knead it for 7 minutes each ball, a kneading hook sounds more efficient for this task! I added roasted garlic to it which seemed to help combine it along with basil and sea salt. cooked it on pizza stone for 15 min, it didn't rise while cooking, but still came out tasting great! Delicious with a bread dipping oil!

Quick and Easy Alfredo Sauce

Reviewed: Apr. 21, 2008
UNBELIEVABLE! Can we get more stars for this recipe?? :) I have to admit, I wasn't sure about this recipe and expected a cream cheese taste to it, not only that but I thought 6oz of parm had to be a misprint. I used butter and sauted 4 cloves of minced garlic before adding the cream cheese. Once the cream cheese melted and the first cup of milk was in, I added broccoli florets then the parm. Once melted I added the second cup of milk, lots of fresh pepper, dash of freshly ground nutmeg and grilled chicken cut into slices WOW amazing dish!! I plan to try this with shrimp next week.

Trail Bars

Reviewed: Mar. 17, 2008
I made this recipe a week ago and wanted to wait to post my review for a few reasons.. The night I made these I felt the instructions and recipe were not detailed enough (and still feel that way). TO start with.. a stick of butter? Try using 1/2 and add apple sauce if needed. Also use a floured rolling pin to thin out the crust! The crust came out more like a cookie, but was well liked. Second layer.. Eggs... no mention of what size, I used 2 of what I had in the fridge, XL. Not only did I have lots of egg batter swimming around on the top of the crust but the fruit and nuts had a faint taste of egg which really turned me off (and that was even after adding cinnamon to the mixture). That being said.. A few days after sitting in the fridge the egg taste is gone and the bars are a great snack or breakfast option. Even my bf liked them! The good of the second layer is you can make it as healthy as you want it. I added all kinds of fruits and nuts and skipped out on the chocolate chips. I also used sugar free honey (which is sweetened with malitol) that being the case, next time I make them I'll set the oven to 325 so the fruits dont brown in the corners of the pan.

Shrimp Lemon Pepper Linguini

Reviewed: Mar. 17, 2008
wow this is a great recipe!! I tripled the sauce recipe which made it 18 cloves of minced garlic.. Now.. I'm a HUGE garlic lover so I went with about 12 cloves and it was delish! I didn't finish the sauce with butter like it says to, instead I used a half bar of cream cheese to make it a creamy, slightly thicker oh and I added capers to give it sort of a picatta look. DELISH! will make again!!

I make a double recipe of these once a month, half of it for my 2 toy maltese dogs and the other half for my K9 work dog. I make half the recipe in a mini muffin pan for sofia and astro and use a regular pan for my work dog Matrix. They love them!!

Banana Wheat Bread

Reviewed: Dec. 29, 2007
shamefully I admit, between 4 people we went through an entire loaf in less than a day!! I didn't change the oil to applesauce because I was afraid it would be dry (I'll try it next time and will soak the walnuts like another person mentioned). I added cinnamon like most people said and used walnuts instead of pecans. I also used sugar free honey as I no longer eat sugar. great recipe & healthy!! update - I've made this both ways (per recipe and changing oil to apple sauce) and it taste exactly the same both ways, so delicious!

Blue Cheese and Walnut Wafers

Reviewed: Jul. 2, 2007
If you're not a HUGE bleu cheese lover, you might just think these are ok, but they're a must for bleu cheese enthusiasts! The first log I made was per this recipe. They were good, but I tweeked it by adding 1/4 tsp garlic powder, let the log chill overnight, sliced them then gave each cracker a dash of hot sauce before baking. They were delish!! While serving them to friends, some topped it with a grilled shrimp, great combination!!

Thai Peanut Chicken

great zip in flavor! I used seasoned rice vinegar instead of wine vinegar (to keep an oriental flair) and added a few cilantro leaves at the end for look and flavor (many Thai dishes use cilantro as an ingredient). Will make again and again!

Chicken Stuffed Buns

Reviewed: May 29, 2007
great recipe! I didn't make them in buns, instead I used 1/2c. asagio, 1/2c. mozzarella and 1c. bleu cheese. Added hot sauce like others suggested and since I'm a huge garlic fan I kept the amount the same (actually 7 because an extra clove fell off the bulb). Baked it in a dish and served it with pieces from a bread boule. Delish!

looking in your local grocery store or oriental market for "Lo Mein Noodles" makes this recipe 10 times better!! I make this recipe at least twice a month, great lunch, snack or dinner. Sometimes I add peanuts just before serving for added protein and crunch!

Mini Cheesecakes I

Reviewed: May 25, 2007
I made them sugar free and they were a big hit! For the crust I used All Bran cereal, pureed it into crumbs with splenda, little butter to combine it. The cheesecake mixture stayed the same (other than splenda used for sugar) and I topped them with mashed strawberries!

Chicken Tetrazzini IV

Reviewed: Dec. 11, 2006
doubled the sauce recipe like everyone suggested also added peas and season salt. Rave reviews! Someone posted to use grated parmesan cheese instead of shredded fresh parmesan. Valuable tip!! I use fresh shredded parm and really wanted to use it on this so I put fresh parm on 1/4 and grated on the rest. The fresh parm didnt brown and just blended into the top instead of making a crust kind of topping.
