Potato Crunchy Tenders

These were FAN-FREAKIN-TASTIC! Seriously, we couldn't stop talking about how we won't make breaded chicken any other way! I think we perfected this recipe with such minor changes-left out the salt since the instant potatoes are usually high in salt & double coated the chicken (egg batter, potato, egg batter, potato). This helped the coating stick really well and used up all the batter ingredients! These had a nice crisp potato pancake-like coating, a thin layer of mashed potatoes and juicy chicken inside. Hands down a real keeper. In fact I'm going to make it again tonight with a different flavored potato package! And I think these would be perfect with a chicken gravy on top.

Black Bean Brownies

These are surprising and super chocolately! I didn't have vanilla so I just used a few more chocolate chips. I also added the 1 tsp of baking powder as another reviewer suggested. I tried baking them in muffin pans and they are like little brownie cupcakes! Definitely making again. Especially since my hubby won't have a clue I'm sneaking in beans into his diet!

Sopapilla Cheesecake Dessert

Delicious! I cut mine into 20 servings since it is so sweet. The crescent roll is a great shortcut to a surprising and different dessert. I used brown sugar with the cream cheese and still tastes great. I also drizzled the too with honey. Hope my mom will enjoy for Mothers Day!

BBQ Glazed Homemade Meatballs

These were on the sweet side but overall very delicious! Next time I will cut back on the brown sugar. Also I didn't have oatmeal so I substituted crushed cornflake crumbs and they worked as a great binder.

T's Peanut Butter Balls

I used more flax seed meal in place of some of the oats. I also used raw sunflower seeds instead of pecans. I call these squirrel cookies they are delicious, I eat them for a power burst at breakfast!

General Tsao's Chicken II

I didn't have the red chilies so I used sriracha sauce and it wasn't quite spicy enough. This is a very tasty sauce though and I won't forget the chilies next time!

Clone of a Cranberry Bliss Bar

This is a really sweet treat, but if you have had the one from Starbucks, this one should be no surprise. I would recommend cutting differently so that you get several small bites, rather than bars. Makes a great holiday treat to give away!

Best Big, Fat, Chewy Chocolate Chip Cookie

WOWZA. Followed this recipe exactly as written. Used shortening to grease the baking sheets. Made 16 large cookies and baked for a total of 20 minutes-but that's because I baked 2 cookie sheets at a time (rotated half way through baking). I didn't refrigerate the dough before I baked it, as some reviewers suggested, and mine still came out thick and not flat/running into each other. My advice: make sure your cookie sheet is flat and not warped. And--just follow the recipe ingredients and instructions exactly and you will have the best, big, fat, chewy, chocolate chip cookies!

Asian Grilled Chicken

I made this recipe for a family BBQ and used chicken breasts and tenderloins. I marinated them for about 4 hours and while the flavor was delicious-especially on the tenderloins, I would recommend marinating overnight. Very versatile marinade recipe-I had everything on hand too! Will add this to my BBQ repertoire!

Savory Bacon and Crab Bread Pudding Eggs Benedict

LOVED IT! Made this for an early Mother's Day Brunch and it was devoured! This was the epidemy of brunch. It captured every flavor you could want and more. I made a couple modifications...Dungeness crab is super expensive so I used 1/2 crab and 1/2 smoked salmon. Oh my goodness, this was a super fabulous idea. I might make this with only smoked salmon next time because we loved the subtle smoky flavor it brought to the dish. Aside from this, I followed the recipe to a "T". I will most definitely be making this one again and again! Thanks Chef John and Allrecipes!!

Banana Banana Bread

Obviously a delicious recipe! The only thing I did differently was added about an 1/8 cup of course sugar to the top before it baked so it would have a nice crunchy crust. A tip: When my bananas start turning brown, I stick them in the freezer. Then when I have a nice collection of 6-7, I thaw them and make this Banana-Banana Bread recipe. Worth every calorie.

Eggs Benedict with Salmon

Oh.my.wow. I loved this! I didn't think I would enjoy the yogurt sauce instead of Hollandaise, but wow. It was great! Ok, no lie, I did add a little butter to it. Personally it needed way more capers and parsley!

Restaurant Style Egg Drop Soup

This is a great basic Egg Drop Soup. The method is easy to follow, I added a few drops of low-sodium soy sauce & a drop of sesame oil to my bowl. Delicious :)
