Asparagus Avocado Medley

This salad is GREAT for days when it's too hot to turn on the oven and all the spring/summer veggies are cheap at the farmers market. I add a little bit of feta just because, but it's good either way. One of my favorite summer recipes!

Easy Gluten Free Beef Stroganoff

As is, the recipe is 3 stars. This is a good starter to spruce up a bit. I cooked the mushrooms (I used more like 8oz) and onion with the ground beef and added some minced garlic, paprika, and Worcestershire sauce.

Ham and Brussels Sprout Bake

Delicious!! I can only give this 4 stars, because I changed a few things. Added more mushrooms, ham and sauerkraut as another reviewer suggested. Also subbed Canadian "peameal" bacon for ham because it was what I had on hand. Very, very good.

Cottage Cheese Chicken Enchiladas

Not what I would call authentic, but they were so good I didn't care! Rated the recipe 4 stars as written, but 5 with changes that I made. I added black beans and corn to the meat mixture and used enchilada sauce and salsa instead of taco seasoning. I'm excited to try it again with verde sauce!

Barbeque Pork Two Ways

I can't believe that I haven't reviewed this recipe yet. I've made it so many times that I have lost count! It's easy and I can do it in the crockpot during the summer without heating up the house. 4 star recipe as written, but I usually sub half of the ketchup with a cup of bbq sauce. Freezes nicely too.

Penne Pasta with Spinach and Bacon

I am rating this 4 stars as I made 2 changes that other reviewers suggested: 1) I used Italian style diced tomatoes and 2) Cooked the spinach with the tomato and bacon mixture rather than wilting with the noodles. It was definitely 5 star with those changes.

Bratwurst, Potato and Cabbage Soup

This was delicious. My bf was wary at first, but he loved it too. This was a rather large batch for just two of us so I froze some. Froze and defrosted nicely. :)

German Brotchen Rolls

I had never had brotchen before, but my bf requested it once I started making breads. He said they taste exactly the way he remembers. These are now my staple dinner rolls, so YUM.

Beef Cabbage Hash

Good, hearty "peasant food" as my boyfriend calls it. Can be a little bland, so I use beef broth instead of water. It takes much longer to cook that the recipe states.

Pork Tenderloin with Creamy Herb Sauce

I love this recipe. I've tried it with pork chops as well as the tenderloin medallions and it's just as tasty. I usually double the sauce fixings though, it's good over garlic mashed potatoes.
