Chantal's New York Cheesecake

Reviewed: May 22, 2014
I have made this at least 3times now and it is truly the best cheesecake I have made. My family prefers this to any commercially made cheesecake. I have made it plain with just graham cracker crust and topped it with a blueberry sauce from this site and also made it Black Forest style with Oreo crust and cherries on top. Both so yummy!! Thanks for sharing this great recipe!

Coconut Custard Pie III

Reviewed: Jul. 11, 2012
Really liked this pie! Very easy and yummy results. I did 1 1/2 cups of milk and 1 cup of half & half, both cinnamon and nutmeg. Very creamy texture and set beautifully. Homemade pie crust just made it that much better. I did bake it for 40 - 45 minutes to make sure it set. Will definately make again. Thanks for sharing!

Chicken Enchilada Soup III

Reviewed: Oct. 18, 2010
First off I want to say that I give this recipe 4 stars if made as written. I feel for my taste it needs a bit more spice than what the recipe calls for. I do want to add that this is a great recipe that you can tweak to your own tastes and end up with a fabulous soup. I made as written the first time and while we liked it I felt it could be better, so I took the left over soup and added to it as some reviewers suggested 1 can of rotel tomatoes, 1 can of mexicorn and added 1 additional tsp. of chili powder and 1/2 additional tsp of cumen. I also feel that 1 full cup of Masa Harina is too much, I will use 1/2 cup next time. Give this one a try you will not be disappointed! My Son said it tasted like Chili's only better with the additions. Thanks for sharing.

Sweet Vanilla Cupcakes

Reviewed: Oct. 6, 2010
Marianne...These are divine! I changed them up a bit by reducing the vanilla to 1/2 tsp and adding in some orange oil and orange zest and then topped them with a stabilized whipped cream frosting also infused with the orange oil and orange zest. My sister took to work for a b-day and I now have 2 more orders to make these again. Thanks again for sharing and your tips!

Asian Chicken Salad

Reviewed: Sep. 15, 2010
Based on the dressing alone, I think this is a 5 star recipe. I have been looking far and wide for this type of dressing. And the fact that I know exactly what is in it makes it that much better. I do think that the use of the Sesame Oil is a must and I used light olive oil instead of vegetable oil. Thanks for sharing!

Stabilized Whipped Cream Icing

Reviewed: Sep. 7, 2010
This worked out beautifully for me. I really love that you can use this icing to frost/decorate with. Used it on my key lime pie and it looked great! I did as one reviewer suggested and first slowly poured the gelatin into cool water, gave it a stir and let it soften for about 5 minutes, then I popped it in the microwave for 10 seconds on 50% power and by the time I had my cream all whipped, the gelatin was cool enough to add to whipped cream mixture. I would not recommend using more than 1 tsp for this as it sets up really nicely with 1 and any more would make it too stiff, IMO. Thanks for sharing...this will be my go to recipe from now on. :)

Classic Tiramisu

Reviewed: Sep. 3, 2010
I made this for my sister who fancies herself a Tiramisu expert and she loved, loved, loved it!! I took alot of reviews into account and scaled this recipe down to 10 servings so that I would only need the one tub of marscapone cheese, which my Italian friend told me to NEVER sub in this recipe. Luckily I have an Italian deli close by and found both the marscapone and lady fingers at very reasonable prices. A 7oz pkg of lady fingers for $2.60, it had 24 lady fingers. I made this in an 8x8 square glass dish and I did use a mixture of strong coffee and kahlua to very quickly dip the lady fingers into. I was able to create 3 layers all together and let it set in the fridge for 2 days, as some had suggested. On the second day it was good, but boy was it better on the 3rd day and Fabulous by the 4th day! So if you want it for a Friday night, make it and put in the fridge on Monday night and you will not be disappointed!! Thanks for sharing!!

Broccoli Chicken Fettuccini Alfredo

Reviewed: May 7, 2010
This was really yummy!! I had to tweak just a bit, I added 3 cloves minced fresh garlic to the melted butter and used some heavy cream instead of milk, only because I had on hand and needed to use it up. Very quick and satisfying meal.

Noemi's Horchata

Reviewed: Apr. 29, 2010
I have been looking for an authentic horchata recipe for a long time...glad to say that I have finally found it! Serena's review was very helpful to me. I too ground the rice and 2 cinnamon sticks together with 2 cups of water to soak them. Once I finished grinding I added 2 more cups of water and blended well. I soaked the mixture overnight and put it through a fine mesh seive. I added a 5oz can of evaporated milk for extra creaminess as I only had 2% milk. I poured the evaporated milk into measuring cup and then the regular milk to make up the difference for a total of 2 cups of milk, 1 Tbls. of vanilla and 1/3 cup of sugar. It turned out so creamy, refreshing and delicious and the best part was that it had a very pronounced cinnamon taste without being overpowering and none of it floating around in the glass. Will be making this for years to come. Thanks for sharing!!

Baked Ziti I

Reviewed: Apr. 29, 2010
I decided to try this recipe after my nephew served this to me for dinner. His was very good, so I could not resist trying it myself with the following changes. I used my own pasta sauce, used half ground beef and half spicy italian sausage and added some fresh mushrooms once the meat was cooked and finally added a bit of fennel seed to the sauce for added flavor, which was my nephew's idea. The result was sooooo good. Comfort food at it's best and so easy too. I just love the way the flavor that the sour cream gives this dish. This is a great base recipe that lends itself easily for you to tweak to your personal tastes and make it your own.

Slow Cooker Chicken and Dumplings

Reviewed: Apr. 13, 2010
I made this for my sister who is a workaholic and comes home too tired to cook sometimes. She said that it was such a great surprise to walk in after a long day and be greeted at the door with the smell of this wafting througout her house. I too made changes to suite her taste. I also used chicken broth. Definately added spices; pepper, poultry seasoning, minced garlic. I did not use salt as the chicken broth and cream of chicken have plenty already. I added 1/2 finely chopped onion, some celery, carrots and potatoes. I sauteed the onion and celery in the butter the recipe calls for and added the minced garlic just before I transferred all to the crockpot. Cooked on high for 3 1/2 hrs and them I removed chicken and shredded it with fork and returned to pot and put my dumplings in at that time and let cook for another 2 hours. All in all a great starter recipe that lends itself to whatever your particular tastes are. I will make this again, but I think I may par boil carrots and potatoes, as they were still a tad firm for my taste. Thanks for sharing a very versatile recipe!
