About this Cook
I’m 21, married, I live in a small rural community in south eastern New Mexico, and I have a 14 month old son and a six year old daughter. My husband works at an oilfiend construction company, and I na at a regional hospital. I am also a full time nursing student at New Mexico State University - Carlsbad.
My favorite things to cook
Anything Mexican, or I guess I should say tex-mex. I spent a lot of time in Alpine TX growing up, and the diverse foods from that area really influence my cooking today.
My favorite family cooking traditions
My mom makes the most out of this world fudge and brownies at Christmas and thanksgiving. I could make myself sick eating them. That and her German chocolate cake she makes for birthdays.
My cooking triumphs
Well, I recently moved from a much larger town to where I live now. Before, wal-mart was 10 minutes away, now it’s a 45 minute drive in good weather lol. So my biggest triumph was learning to get dinner on the table every night with whatever’s in the house, and making things that my extremely picky daughter and husband will eat to boot.

Charcoal cornbread.... enough said.

I made this on the stove in a double boiler and it came out awesome. Great simple recipe.

Blueberry Gingerbread
This is the perfect gingerbread recipe. I have made it twice, once exactly as written and once without the blueberries, double spices, and 5 tbs molasses. It is great as written, my hubby just isn't a blueberry fan so that's why I tried it that way. I will use this recipe as my go-to for gingerbread!

Chili Mac Casserole
Awesome, total comfort food and this recipe makes enough to feed a small army which is perfect for my family with two growing children, a husband that works outside every day, teenage cousins that visit frequently and friends that are always hanging around.
