Today's attempt at making a well loved potato bread recipe has failed again!  I actually started the sponge on Saturday, AFTER proofing the yeast this time.  It took until this afternoon (Tuesday) for the final, albeit somewhat deflated, "rise".  I've used this recipe for several years and… MORE

Cod with Italian Crumb Topping
Very nice. Used mayo instead of the egg white and cooked it on parchment paper. The cod was flaky and moist.

Beer Batter Fish Fillets
This was delicious! I read reviews and should have listened! Unless you don't mind mushy fish then the fish needs to be COMPLETELY defrosted. The batter became very dark brown, but held up well even with the extended cooking time. I added about a tablespoon of salt-free garlic based seasoning (Costco) to the batter. I used Swai (didn't tell DH) cut into large pieces instead of cod and it was very good. Used the same batter for deep-fried mushrooms that needed eating too!

Pesto Chicken Penne Casserole
This would be probably excellent just as submitted, but I didn't have Alfredo sauce, we're not fans of tomatoes, and I didn't have the cheese blend. Bread crumbs and Parmesan topping did the trick. I had to substitute with some heavy cream, cream of chicken soup and additional water, but let me say, it WORKED. Either way, I'll be making this on a regular basis.
