About this Cook
I grew up on a farm in Tennessee learning how to cook what we grew in the garden. I'm definitely a Southern girl at heart and love Southern cooking. I like to say there isn't a recipe I won't try...unless it involves beets. Ha!
My favorite things to cook
Southern food! You can't go wrong with it when you cook for guests - who doesn't like macaroni and cheese? Plus, i know most of the recipes by heart, so I don't have to drag out a cookbook. It also proves the theory that enough cheese can make anything taste good.
My favorite family cooking traditions
My sister and I get together each Thanksgiving and go absolutely crazy. It wouldn't be Thanksgiving without someone making pink gravy, or potatoes turning black, or completely forgetting the squash in the I suppose I would say "Thanksgiving Mishaps" would be our tradition.
My cooking triumphs
I got my husband to enjoy salmon. Granted, we had just started dating when I made it for him and he HAD to enjoy my salmon, but I'm calling it a "W" anyway.
My cooking tragedies
Well, there were the peanut butter noodles that I made with Worschestershire sauce (note to self: just because soy sauce and Worschestershire sauce come in similarly-shaped bottles does NOT mean they are similarly-flavored.) There is also the blackened catfish that turned out more "blackened" than "catfish." My husband still teases me about that (it even made an appearance in our wedding vows!)

Chicken Alfredo Zucchini Boats
This is perfect for all the zucchini I have right now! I didn't use chicken but rather used a lot of mushrooms and onions. My husband took the broccoli I had for lunch that day so that unfortunately got left out. I didn't have any tomatoes, either, so I served them with some marinara sauce on the side. I'm thinking this will be a great meal for baby-sitting my niece and nephew because it's gluten-free (nephew's allergic) and it's really a fun dish to eat because everyone gets their own "boat." This was an easy weeknight meal and I'm looking forward to the leftovers for MY lunch today. Very versatile recipe, which I love. Yummy!

Classico(R) Veggie Spaghetti
This is a perfect summertime meal! I always have a lot of leftover veggies into fridge (thanks, Mom's Garden) and this is a great vehicle to use them up in a quick, tasty meal. I used a LOT I mushrooms and some tomatoes but I could see zucchini or asparagus working well with this dish. I also used fresh herbs from the garden instead of dried. Dinner was ready by the time my husband watered the plants (and he took the leftovers for lunch!) Big fan of anything that saves food and is this versatile.

Roasted Okra
I thought okra was only meant to be fried - WRONG. This is ridiculously easy and delicious. My husband even ate it (and he claims to hate okra. Pfft.) I made this last night to go with some pasta I was making but the pasta took longer than I thought and I was hungry. Long story short - the okra didn't make it to the dinner table (but was a lovely appetizer? Ha.) So flippin' good.
