Cheesecake Topped Brownies

Boy, is my husband's staff ever in for a treat tomorrow! These are just awesome, decadent good. I don't care for "prepared frosting" so I improvised a little for the topping. While the brownies were still warm, I sprinkled them with toasted chopped pecans and poured enough carmamel sauce over to cover. I stuck the pan in the fridge and when the caramel had set I drizzled the whole thing with a type of ganache - one cup of milk chocolate chips, about a tablespoon of butter, and a good splash of half and half (would have used heavy cream but I didn't have any). When cutting these, run your knife under hot water and dry before each cut for the neatest, "clean cut" brownies. Pretty to look at and even better to eat!

Orange Meringue Pie

Overly sweet and tart at the same time but had potential. With a few changes, I would rate this higher. Since most of the liquid used is orange juice, which is already sweet, I don't think a full cup of sugar is called for. Also, 4 tsp. of orange zest makes this just a little bitter. Lime juice didn't seem to complement the orange, so I substituted lemon juice. If you try this recipe, make the following changes or substitutions: 2/3 cup sugar rather than full cup, 2 tsp. orange zest rather than 4 tsp., and lemon juice instead of lime. As for the crust, I felt these changes were needed: 4 T. butter rather than 5, and only 2 T. sugar.

Chocolate Cherry Cupcakes

Easy. Beautiful. Delicious. Different. All good reasons to try these. Follow directions for baking time on back of cake mix box. I frosted with a vanilla buttercream frosting and decorated with Valentine sprinkles. I was proud to send them with my husband this morning for his staff! Thanks for an easy, yet creative twist on the typical boring, cake mix cupcake!

Oatmeal Butterscotch Cookies

For those of you having trouble with the cookies being, dry, crumbly, or are having trouble removing them from the cookie sheet, it's probably because there is not enough butter in the dough. Try a full cup of butter, not 3/4 cup. For those having trouble with flat cookies, simply refrigerate your dough until it is somewhat firm.

Rick's Special Buttercream Frosting

Truly an exceptional frosting, especially when butter is substituted for half of the shortening. Not too sweet, with a fluffy, creamy texture. There are infinite possibilites for a variety of flavorings and add-ins. It was a generous amount to fill and frost a 3 layer 9-inch cake. A real keeper and will be used over and over!

Black Magic Cake

I've done quite a lot of baking in my life, which has included more cakes than I could count. This chocolate cake is one of the best I've ever made. Moist, fragrant,dark and with a rich chocolate flavor. It will become a classic go-to recipe for me. No reason to search for a better chocolate cake.

Irish Cream Bundt Cake

This is a very pretty, moist cake. The pecans definitely dress it up. It is delicately flavored, with just enough Bailey's to make you wonder what that unusual flavor is. Not overly sweet, great to serve as a coffeecake.

Delicious Raspberry Oatmeal Cookie Bars

My husband said these were 5 star bars and I almost felt guilty...didn't EVEN tell him how little effort it took to make them! What a great recipe to go to when you need something sweet, home baked, don't want to make a major project out of it, and with just a few ingredients that you always have on hand!

Autumn Cheesecake

Much has been written about doubling the crust and filling ingredients and pre-cooking the apples - all great tips. Not as much, however, has been said about the wonderful texture and creaminess of this cheesecake. I'm sure the water bath has a lot to do with this, so don't skip this step. The filling is so good I think I'll use it as a standard recipe to use with other add-ins and toppings.

Easy Slow Cooker French Dip

I've relied on this recipe so many times before finally getting around to reviewing it. It's that good, and that easy. I always use a chuck roast. Even though it may not slice well, I believe it has superior flavor and is really well suited to slow cooking. It shreds up nicely, and is easy to spoon onto rolls for sandwiches. I use Guiness Draught, tho' I'm sure most any beer would work well, and I also add a few shakes of garlic powder and Worcestershire sauce.

Pepperoncini Beef

I found this recipe for my mother, who was looking for something good,quick and easy to make with a chuck roast. This definitely fit the bill! Some may find the "kick" of the pepperoncinis a little too sharp, but no complaints in my family!

B.L.T. Salad with Basil Mayo Dressing

I have always used this recipe for the dressing itself and don't find it necessary to change a thing. The bacon drippings provide a nice, rich flavor. Use a light hand when dressing your greens, and because this is a heavier dressing, it works perfectly with the Romaine lettuce called for.

Cherry Cobbler II

Wow, good old fashioned comfort dessert at its finest! And who would have ever thought something so down home good could be so easy and quick to throw together? Knowing I'm repeating many tips already suggested, this is what I found worked well: Add 1/4 tsp vanilla and a little cinnamon to the batter, bake in an 8" square pan or equivalent sized baking dish,cut butter down to 6 tablespoons, and sprinkle with sugar during the last 15 minutes of baking. Have fun with your favorite flavors of pie filling - all work well. Mmmmmmmmm, grandmas always were the best bakers, yours included, Jan!

Banana Cake X

I had three over ripe bananas I wanted to use up and stumbled upon this recipe. I wouldn't consider it "company" quality, but it's a nice, quick cake to make. I used a spice cake mix, 3 bananas, and topped with a caramel glaze of 1/2 c. butter, 2 tsp. milk or cream, and 1/2 c. brown sugar, boiling until sugar is dissolved.

Mexican Bean Salad

I made this for a Mexican Pot Luck at my husband's office. Even though 40 people brought dishes, this was one of the few that was entirely devoured! This is a wonderful, tasty, and colorful salad. Very attractive served in a trifle bowl, or any clear glass bowl. I wouldn't change a thing.

Lemon Bundt Cake

Since I used a yellow cake mix, I added some grated lemon zest and about 1/2 tsp. lemon extract to the batter. Even tho' it was very good, I thought it was a tad too oily and next time would reduce the oil to 1/2 c. I made a glaze of the juice from one lemon, and powdered sugar. Can't wait to try this recipe using a white or yellow cake mix, vanilla pudding, root beer and root beer extract!

Brussels Sprouts with Mushrooms

One sure way to ruin Brussels sprouts (or almost any vegetable for that matter) is to overcook them. This was perfect cooked for 7-10 minutes rather than 15. This is a good, basic recipe, made even better with the addition of garlic, sliced shallots,and crumbled, fried bacon. A little chopped, fresh, red bell pepper would be a nice splash of color too.

Strawnana Bread

I made these as muffins, omitting the orange zest and nutmeg, as I wanted a pure, strawberry-banana flavor. I also left 1/2 cup of the strawberries chunky, which added some texture and color. Yum! my husband's staff loved them too...all gone by 10:00!

Baked Ham with Maple Glaze

Good as is, but would have preferred a stronger maple flavor, even though I used Grade B pure maple syrup. I will probably increase the ratio of syrup to the other ingredients if I make this again.
