Low-Fat Blueberry Bran Muffins

I used oat bran instead of wheat bran because I couldn't find it at my store. Also substituted Splenda brown sugar for the sugar, but otherwise made as directed. They puffed up nicely. I had no trouble with doneness. Tasted good and just sweet enough. Chewy, but in a good way. (maybe it was the oat bran?)

Baked Asparagus with Balsamic Butter Sauce

Very tasty! Didn't have balsamic vinegar but used Oil and vinegar dressing instead. Probably will use reduced sodium soy sauce next time.

Raspberry Peach Cobbler

Very tasty! Made it just as directed. It as a little dry, but that may have been because I had to use frozen peaches and didn't let them sit out enough. Will try to make them more syrupy next time. But the flavor was delicious.GREAT sugar free recipe!

Emily's Easy Sausage and Spicy Tomato Dip

Very tasty. I double it and used 1 regular pork sausage and one 1 pound hot. Served with crackers and chips. Kept it warm in a crockpot. Big office hit!

Downeast Maine Pumpkin Bread

Followed recipe exactly first time out. Came out tasty and moist. Husband said it was the best pumpkin bread he'd ever had. I made two larger loafs from it.

Brisket with BBQ Sauce

Totally easy and awesome! Buy a good cut of brisket from your butcher for the best result. I didn't have onion salt, so I substituted onion powder. I wrapped in foil, marinated overnight, and cooked it in the foil. I added a little more sugar to the sauce and more pepper. Yum!!!

Norwegian Christmas Bread

I made this today for my mother, whose mother was from Norway. She used to make "YuleKake" ever year and send it to us. We've been trying to find a similar recipe and this is it! I used the fruit cake candied fruit mix instead of just citron to add more color and also dusted the raisins and fruit with flour before mixing them in. I may soak the raisins next time to plump them up. Anyway, great blend of tastes. Nice and subtle. No one item overwhelms the other (such as the cardamon). Thanks for this!
